Spinach Filled Spaghetti Nests

Ingredients/ Συστατικά
  • •500 gr. /18 oz. spaghetti
  • •2 cups grated yellow cheese (I used regato but you can use anything you have in your fridge)
  • •½ cup milk
For the Spinach Filling
  • •400 gr. /14 oz. spinach, frozen or fresh
  • •1 onion, chopped
  • •1 scallion, sliced
  • •1 ½ cups mushrooms, chopped
  • •1 cup carrots, sliced or baby
  • •200 gr. /7 oz. feta cheese, crumbled
  • •1 tsp salt
  • •½ tsp pepper
  • •1/3 cup fresh dill, chopped
  • •½ cup white wine
  • •1/3 cup cracked wheat
  • •3 tbsp olive oil
For the Tomato Sauce
  • •1 cup tomato juice
  • •1/3 cup water
  • •½ tsp dried oregano
  • •½ tsp dried basil
  • •½ tsp dried thyme
  • •½ tsp garlic powder
  • •½ tsp onion powder
  • •1 tsp sugar

For the Spinach Filling
  1. In a deep skillet pour the olive oil and in medium heat sauté for about 3 to 4 minutes the onion and scallion.
  2. Add the mushrooms and carrots and continue to sauté.
  3. Τhrow the spinach (if it is fresh just put it in after you have washed it and drained it. If it is frozen, let it thaw, wash it, drain it and then add it) and continue to sauté.
  4. Pour the wine, add the dill, salt and pepper lower the heat to medium/low and let it simmer until the onions and carrots are soft about 20 minutes.
  5. Five minutes before turning off the heat, throw the feta cheese and the cracked wheat and mix.
  6. Remove from fire and set aside.
  7. In the meantime boil the spaghetti according to your liking adding ¼ cup olive oil to the pot where you boil them.
For the Tomato Sauce
  1. At the same time prepare the tomato sauce by putting all ingredients in a small pot and simmer for as long as the spinach filling is prepared.
Assembly
  1. Preheat oven to 200° C/400° F
  2. Take a Pyrex or a deep pan 28cm X 39cm/ 11 in. X 15 in. and butter it well.
  3. Place the spaghetti that way so as to make rounded nests the one next to the other.
  4. Add two heaping spoonfuls of the spinach filling in each nest.
  5. On top of it pour 2 to 3 spoonfuls of tomato sauce and on top of this throw a handful of cheese.
  6. Repeat for all nests.
  7. Pour the ¼ cup milk and place it in the oven.
  8. Bake for about 20 minutes or until the cheese has melted completely and the milk has been almost absorbed.
