Carrot Cake

- 175 gr. / 6 oz. sugar
- 175 gr. / 6 oz. corn oil
- 3 large eggs lightly beaten
- 150 gr. / 5 oz. grated carrots
- 60 gr. / 2 oz. raisins
- zest of 1 large orange
- 175 gr. / 6 oz. self-raising flour
- 1 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- ½ tsp grated nutmeg
- For the Frosting
- 80 gr. / 3 oz. caster sugar
- 1½ tbsp orange juice
- Preheat oven to 180 degrees Celcius.
- Oil and line the base and sides of an 18 cm / 7 in. bread tin with baking parchment.
- Throw the sugar and oil in the mixer's bowl and add the eggs.
- Mix until they incorporate.
- Stir in the grated carrots, raisins and orange zest.
- Mix the flour, soda and spices and sift them to the bowl.
- When they are incorporated stop mixing.
- The mixture will be fairly soft and almost runny.
- Pour the mixture into the tin and bake for 45 to 50 minutes.
- Let it cool for 5 minutes, take out of the tin and peel off the paper .
- Beat together the frosting ingredients and drizzle it on top.
