Green Salad with Orange, Pines and Halloumi Cheese

Ingredients/ Συστατικά
  • 80 gr. / 3 oz. of greens (I used green and red salad and arugula)
  • 2 oranges in slices (You can see the pictures on how to slice it)
  • 20 gr. / 1.5 tbsp toasted pines (you toast them by putting them in the oven at 150° C/ 300° F for about 10 minutes)
  • 100 gr. / 3.5 oz. Halloumi Cheese
  • Salt and pepper
For the Vinaigrette
  • 10 tbsp olive oil
  • 3 tbsp orange juice
  • 2 tbsp vinegar from white wine
  • 2 tbsp honey

For the Vinaigrette
  1. You can make vinaigrette the day before and store it in the fridge.
  2. Place all the ingredients in a glass vase and shake very well until the honey is completely dissolved.
  3. Put in the fridge until you use it.
  4. Cut the halloumi cheese in slices and toast in a non-stick frying pan until it takes a nice golden color.
  1. Cut the orange in slices as shown in the pictures.
  2. Divide the greens in two plates throw the pines.
  3. Arrange the orange slices and the halloumi cheese.
  4. Pour as much of the vinaigrette as you think it is appropriate for you and serve.
