Smoked Salmon Pasta

Ingredients/ Συστατικά
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 cup vegetable stock
  • 1 cup white wine
  • 1 ½ tbsp scotch
  • 100 gr. / 4 oz. smoked salmon, cut in chunks
  • 1 cup light cream
  • ¼ cup parmesan
  • Chopped parsley
Instructions/ Εκτέλεση
  1. Cook pasta according to your liking.
  2. Preferably cook it al dente because it is going to be cooked again when you will pour it in the sauce.
  3. In a skillet pour the olive oil and in medium heat sauté the onion.
  4. Add the wine and deglaze the pan.
  5. Pour the stock and the scotch and cook on medium heat for about 10 minutes.
  6. Add the cream, the parmesan and the parsley and cook until the sauce starts to thicken a bit.
  7. Add the salmon and let simmer for couple of minutes.
  8. Add the pasta and toss.
  9. Serve immediately.
