Molten Chocolate Cakes

  • 50 gr. / 2 oz. butter at room temperature
  • ½ cup sugar
  • 340 gr. /12 oz bittersweet chocolate, I used with 53% cocoa
  • 4 large eggs
  • ⅓ cup flour
  • 1 tsp vanilla extract
  • 1 tbsp cognac or brandy
  • A pinch of salt
  • 6 ceramic molds, lined with parchment paper as shown in the pictures
Instructions/ Εκτέλεση
  1. Preheat the oven to 200° C/ 400° F.
  2. Prepare the molds as follows.
  3. First butter them well, then cut parchment paper as shown in the pictures and line their bottom. Butter the parchment paper as well.
  4. First melt the chocolate either in bain-marie or in the microwave.
  5. Set aside and let cool a little bit.
  6. In your mixer put the margarine and the sugar and mix.
  7. Add the eggs one at a time and mix well after each one is added.
  8. Add the salt, the vanilla extract and the cognac.
  9. Next throw the flour and finally pour the melted chocolate.
  10. Fill the molds with the chocolate batter evenly.
  11. Bake for 10 to 12 minutes.
  12. You can serve them with vanilla ice cream or slightly beaten heavy cream.
