Molten Chocolate Cakes

- 50 gr. / 2 oz. butter at room temperature
- ½ cup sugar
- 340 gr. /12 oz bittersweet chocolate, I used with 53% cocoa
- 4 large eggs
- ⅓ cup flour
- 1 tsp vanilla extract
- 1 tbsp cognac or brandy
- A pinch of salt
- 6 ceramic molds, lined with parchment paper as shown in the pictures
- Preheat the oven to 200° C/ 400° F.
- Prepare the molds as follows.
- First butter them well, then cut parchment paper as shown in the pictures and line their bottom. Butter the parchment paper as well.
- First melt the chocolate either in bain-marie or in the microwave.
- Set aside and let cool a little bit.
- In your mixer put the margarine and the sugar and mix.
- Add the eggs one at a time and mix well after each one is added.
- Add the salt, the vanilla extract and the cognac.
- Next throw the flour and finally pour the melted chocolate.
- Fill the molds with the chocolate batter evenly.
- Bake for 10 to 12 minutes.
- You can serve them with vanilla ice cream or slightly beaten heavy cream.
