Mascarpone Pots with Strawberries

- 200 ml heavy cream
- 1 tbsp caster sugar
- 500 gr. Mascarpone cheese
- 150 gr. Caster sugar
- 2tbsp white rum
- 11 strawberries cut in pieces
- 10 tbsp strawberry marmalade
- 10 lady’s fingers
- ½ cup milk
- 2 tbsp white rum
- In a bowl beat the heavy cream and the 1 tbsp caster sugar until for the heavy cream to have the texture of yogurt. Set aside.
- In another bowl beat the mascarpone, the caster sugar and the rum until soft. Incorporate both batters.
- In a small bowl put the milk and the 2 tbsp of rum.
- Depending on the size of the ramekins you will need between 8 and 10.
- Cut the lady’s fingers in such a way so as to fit the bottom of the ramekins.
- Baptize them in the milk/rum batter and place them on the bottom of the pots.
- With a spoon add about one spoon in each ramekin.
- Add the strawberry marmalade and the pieces of strawberries.
- Put in the fridge for couple of hours so as for the ingredients to release their aromas and serve.
