Chicken with Prunes and Orange Juice

- 1 kilo/ 2 lb. chicken breasts, skinless, boneless cut in small cubes
- 2 garlic cloves, minced
- 350 gr. / 12 oz. prunes without the pit
- Juice of 1 orange
- 1½ cup dry white wine
- ¼ cup olive oil
- ½ cup hot water
- Salt and pepper
- In a pot heat the olive oil and sauté the chicken pieces until they become pale.
- Pour the orange juice and ½ cup hot water.
- Boil for 15 minutes in low heat.
- In the meantime, soak the prunes in the wine.
- Throw the prunes and wine in the pot, season with salt and pepper and simmer for another 15 to 20 minutes.
- If the sauce is runny, you thicken it with 1 tbsp corn flour dissolved in 1 tbsp water.
- Serve with rice as I did or with pasta or mashed potatoes.
