French Onion Soup

- 5 onions, sliced
- 3 tbsp olive oil
- 3 tbsp butter
- 2 garlic cloves, minced
- 1 tbsp sugar
- 1,5 lt. / 3 pints veal or beef stock
- 1 cup dry white wine
- 4 tbsp cognac or brandy
- Salt and pepper
- 5 slices of bread
- Yellow cheese shredded
- In a deep pot add the olive oil and butter in medium/high heat.
- Add the onions and garlic and sugar.
- Sauté for one minute and then reduce the fire to low and let them simmer for an hour to caramelize.
- Increase fire to medium/high and pour the wine.
- Deglaze and let it evaporate until it remains half.
- Pour the beef stock, reduce fire to medium/low and let simmer for 20 to 25 minutes.
- Add salt and pepper.
- Five minutes before the end pour the cognac or brandy.
- Turn on the broiler.
- Take a slice of bread and spread some shredded cheese.
- Do this for all the slices.
- Place them under the broiler and bake them until they get a nice golden color.
- BE CAREFUL AND DON’T LEAVE THE BROILER UNATTENDED. IT WILL ONLY TAKE 3 TO 4 MINITUES MAX FOR THEM TO BE READY.
- Serve in bowls with a slice of bread floating on top of the soup.
