Cauliflower Soup Paprikash

Ingredients/ Συστατικά
  • 1 onion, coarsely chopped
  • 2 carrots, sliced
  • ¼ cup sweet red wine
  • 2 lt / 4 lb. vegetable stock
  • 1 cauliflower head, cut in small florets
  • Fresh ginger, 1 cm / half inch, grated
  • 3 tbsp tomato sauce
  • 1 tbsp brown sugar
  • A bunch of parsley, chopped
  • Salt and pepper
  • 1 tbsp sweet Hungarian paprika (you can use a mix of hot and sweet if you want it spicy)
  • 100 gr. / 3.5 oz. Ditali pasta
  • Olive oil
Instructions/ Εκτέλεση
  1. In a deep pot pour about 4 tbsp of olive oil and sauté the onion in medium heat until it becomes soft.
  2. Add the carrots and continue to sauté for one minute.
  3. Pour the wine and let it evaporate up to half of its volume.
  4. Add the stock, paprika, tomato paste, sugar, salt and pepper.
  5. Throw the cauliflower, grated ginger and the parsley.
  6. Reduce fire to low and simmer for about 15 minutes.
  7. Three minutes before you turn off fire throw the pasta.
  8. When it is ready turn off fire and let the soup stay for about five to ten minutes.
  9. In this way the pasta will be fully cooked and become soft.
  10. Serve with warm bread and you can add shredded cheese on top.
