Lemon Pie the Easy Way

Ingredients/ Συστατικά
For the Crust
  • 300 gr. / 10.5 oz. Digestives
  • 3 tbsp melted butter
For the Lemon Curd
  • 2 large eggs
  • 1 cup sugar
  • ½ cup melted butter
  • ⅓ cup lemon juice
  • ⅔ water
  • 2 tsp corn starch
For the Meringue
  • 4 egg whites
  • Pinch of tartar
  • 3 tbsp confectioner’s sugar

For the Crust
  1. Preheat oven to 175°C / 375°F.
  2. Put the digestives in your blender and make them fine crumbles.
  3. Put them in a bowl and pour the melted butter.
  4. Mix until all crumbles have been wet.
  5. Take a round tart pan with diameter of 25 cm/10 in.
  6. Place the crumbles on the bottom and spread so as to cover it and the sides up to 2 cm / a bit less than 1 in.
  7. Place it in the oven and bake for 10 minutes.
  8. Remove and set aside.
For the Lemon Curd
  1. Take a microwave oven safe bowl and put the eggs and sugar and whisk to incorporate.
  2. Add the melted butter and whisk again.
  3. Add the lemon juice and the water in which you have dissolved the corn starch.
  4. Mix to incorporate and place it in the microwave oven putting underneath a dish.
  5. Start you oven at the highest temperature for 1 minute.
  6. Remove whisk and put back in the microwave for another one minute and so on and so forth.
  7. In my oven it took 4 minutes to arrive at 86°C/ 186°F which is the right temperature for the eggs to cook.
  8. If you don’t have a thermometer, you will know it’s ready when it covers the back of your spoon and doesn’t drop all.
  9. Remove and set aside.
For the Meringue
  1. Put the egg whites in your stand mixer and with the wire whisk until soft picks form.
  2. Add the cream of tartar and the sugar and continue to whisk until stiff picks are formed.
  1. Take the tart pan with the digestives and spread the lemon curd to cover the bottom entirely.
  2. On top arrange the meringue in any shape you like making sure it covers the filling completely.
  3. Bake in a preheated oven at 175°C / 375°F for about 10 minutes or until the meringue has taken a nice golden color!
