Little Pancakes with Cream Cheese, Smoked Salmon and Shrimps

Ingredients/ Συστατικά
For the Pancakes (about 24 small pancakes)
  • These can be made at least two days in advance.
  • ½ cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup crème fraiche
  • ¼ cup milk
  • 1 ½ tsp corn oil
  • 1 tbsp fresh chives, chopped
For the Cream Cheese Spread
  • This can be made one day ahead
  • 200 gr. cream cheese
  • Pepper
  • ½ tsp onion powder
  • 1 tbsp fresh dill, finely chopped
For the Smoked Salmon
  • 1 smoked salmon fillet
  • Half lime peeled cut in slices, and then each slice cut in 4 pieces
  • Fresh dill to garnish
For the Shrimps
  • 10 small shrimps
  • Smoked paprika
  • Salt and pepper
  • ½ cup Marsala wine, divided
  • ¼ tsp corn starch dissolved in ¼ tsp water
  • Fresh parsley to garnish

For the Pancakes
  1. In a bowl add all the dry ingredients.
  2. Add the egg, milk, crème fraiche, oil and chives and mix until everything is incorporated.
  3. In a skillet add some butter in medium heat.
  4. If you have metal cookie molds with Christmas themes take them out and place them inside the skillet.
  5. Add one spoon of the batter inside the mold and cook them just like you cook pancakes.
  6. It takes about 30 seconds each side.
  7. Remove, let them cool and place them in the fridge.
For the Cream Cheese
  1. Mix everything and place it in the fridge.
Assembly of the Smoked Salmon Canapés
  1. Take 12 of the little pancakes and spread with a piping bag some cream cheese.
  2. Cut the salmon fillet in 12 strips and add one in each pancake.
  3. Decorate on top with a small piece of lime and fresh dill.
For the Shrimps Canapés
  1. In a skillet pour 1 to 2 tbsp of olive oil and in high heat sauté the shrimps for one minute adding salt and smoked paprika.
  2. Pour ¼ of the Marsala wine and cook until it is completely absorbed.
  3. At that point remove the shrimps and either you keep them in the fridge for later or put the aside and keep them warm until served.
  4. In the same skillet add the rest of the Marsala wine, scrape the skillet and pour the corn starch.
  5. Let it boil for a few seconds until it thickens
  6. Remove and set aside.
Assembly of the Shrimps Canapés
  1. Take the rest 12 pancakes
  2. Add the rest of the cream cheese.
  3. Top with one shrimp per canapé and drizzle about ¼ tsp of the Marsala sauce.
  4. Garnish with parsley.
  5. Note: The Marsala sauce must be warm so either you make it a few minutes before serving them or make it in advance and warm it up adding another ¼ cup of the wine just before serving it.
