Lemon, Honey Chicken with Potatoes and the Winners

- 1 chicken 2 kilos / 4 lb.
- Juice of two lemons
- 3 tbsp honey
- 2 cups water
- ¼ cup olive oil
- 3 tbsp mayonnaise
- 20 small potatoes
- 3 carrots, cut in slices
- Salt and pepper
- 1 tbsp dried oregano
- 1 cup breadcrumbs
- ½ cup croutons
- 1 onion, chopped
- 1 egg, beaten
- Juice of half lemon plus the rind of half lemon
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp dried thyme
- Salt and Pepper
- Preheat oven to 200°C / 400°.
- Mix everything in a bowl and put aside.
- Put the potatoes in a deep pot with water and salt and boil them for 15 minutes at high.
- Drain them.
- Stuff the chicken, place it in a deep pan and add the potatoes carefully.
- Add the carrots.
- Cover the chicken with mayo and throw salt, pepper and the oregano.
- Pour the olive oil and water and cover the chicken with a parchment paper for the first 30 minutes of baking, then take it off.
- Brush the chicken with the honey/lemon juice batter every 15 minutes and up until 30 minutes before the end.
- Whatever is left from the brushes pour it to the potatoes after the last brush.
- You have to calculate 20 minutes per half kilo / pound plus 20 more minutes in total.
- My chicken which was 2 kilos / 4 lb. took about 100 minutes to cook.
- Five to ten minutes before the end turn your oven to the broiler and leave it to get color and become crispy.
- Please don’t leave it unattended because it may get burnt.
- Remove from the oven, let it rest for 10 minutes and serve.
