Four Type of Mushroom Pie

- 12 phyllo sheets
- 3 tbsp olive oil
- 3 tbsp butter
- 500 gr. / 17 oz. white button mushrooms
- 30 gr. / 1 oz. dried chanterelle, shiitake mushrooms
- 30 gr. / 1 oz. dried porcinis
- 5 onions, sliced
- 1 tbsp sugar
- ½ cup dry white wine
- Salt, pepper
- ½ tsp of each dried basil, dried oregano, dried thyme, and garlic powder
- 100 gr. / 3.5 oz. cream cheese
- 1 cup cheddar or any other soft cheese
- 2 eggs
- ½ cup milk
- 1 tsp corn starch
- 1 cup cracked wheat
- Olive oil to brush the phyllo sheets, about ⅔ of a cup
- Put the dried mushrooms in a bowl, add hot water and let them stand for about 15 minutes.
- In a blender add the eggs, milk and corn starch and mix.
- Set aside.
- Cut the white button mushrooms in slices and put aside.
- In a large skillet add the olive oil and butter and in medium heat sauté the onions until they are caramelized, adding the 1 tbsp of sugar as well.
- When they are dark and sweet add the white button and the dried ones after you have drained them.
- Pour the wine and add the herbs, salt and pepper.
- Sauté until the white button mushrooms become soft.
- Add the cream cheese and cheddar.
- Pour the eggs/milk batter and mix gently.
- Add the cracked wheat and mix again.
- Turn off the fire and let it rest for about 10 minutes.
- Take a round pan with about 40cm / 16 in. diameter.
- Oil it well and place one phyllo sheet so as to cover the bottom and exceed the sides.
- Oil it again.
- Place another phyllo sheet.
- Repeat this 7 times.
- When the seventh phyllo sheet has been placed, add the mushroom filling and level it.
- Start putting phyllo sheets on top of filling following the exact same procedure as before.
- In the end cut the excessive phyllos from the sides and close the pie by making a cord around with the phyllo.
- Cut the upper part with a sharp knife and put it in a preheated oven at 175°C / 350°F.
- Be careful to cu the upper phyllo part and not the lower one.
- Bake for about 30 minutes.
- Remove from the oven and let it rest for about 15 minutes.
- Cut the pieces and serve.
