Rabbit with Vegetables and Herbs

Ingredients/ Συστατικά
  • 1 rabbit, cut in portions
  • 5 carrots, thickly sliced
  • 1 yellow, one red pepper, sliced
  • 2 large zucchinis, thickly sliced
  • 2 onions, sliced
  • 500 gr. / 1 lb. white mushrooms, sliced
  • 1 can whole tomatoes in their juice
  • 1 cup beef stock
  • 2 garlic cloves, minced
  • 2 rosemary sprigs
  • 2 thyme sprigs
  • 4 sage leaves
  • 1 tbsp sugar
  • Salt, pepper
  • Olive oil for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 200°C / 400°F.
  2. In a skillet pour couple of tbsp. of olive oil and sauté the rabbit portions in medium heat to get a nice golden color.
  3. Remove and place them in a deep pan.
  4. In the same skillet add some more olive oil and sauté the onions and peppers until they become somewhat soft and transparent.
  5. Add the garlic and sauté for a minute.
  6. Remove and add them to the pan with the rabbit.
  7. In the same skillet add some more olive oil and sauté the mushrooms until soft.
  8. Throw them in the deep pan along with the others.
  9. In the same skillet add some more olive oil and sauté the zucchinis and carrots.
  10. Add the tomatoes, sugar salt, pepper, sage, rosemary and thyme and boil for two minutes.
  11. Throw everything to the pan and bake them in the oven for 45 minutes or until the carrots are soft.
  12. Remove, let it cool for ten minutes and serve.
  13. If you want the sauce to be thick, dissolve 1 tbsp of corn starch in 1 tbsp of water and pour it in the sauce while in the oven 1 minute before you take it out.
