Sushi Cake

Ingredients/ Συστατικά
  • 3 nori sheets
  • 2 cups of sushi rice
  • 4 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp wasabi sauce
  • 2 tbsp Japanese mayo
  • ½ cucumber, shredded
  • 6 pieces of smoked salmon plus some more for garnishing
  • Cucumber slices for garnishing
  • Dill for garnishing

For the Rice
  1. Wash rice 6 to 7 times until the water comes out somewhat clear.
  2. In a pot we pour 2 cups of water and rice and bring it to boil in high temperature.
  3. When it starts to boil turn off heat.
  4. Transfer the pot to another burner and turn the heat to the lowest.
  5. Leave it there for 12 minutes without lifting the lid.
  6. Turn off the heat.
  7. Transfer to a wooden surface or to the wooden sushi basket.
  8. Mix rice vinegar, salt and sugar and drizzle it over the rice mixing gently with a wooden spatula or ladle.
  9. In another bowl mix the wasabi sauce and the mayo.
  10. Take a nori sheet with the textured side looking at you.
  11. Brush it with some wasabi/mayo batter.
  12. Divide rice in three butches and spread the first one on top making sure it covers the nori completely.
  13. Place another nori sheet on top and brush again with wasabi/nori batter.
  14. Spread the second rice quantity and on top of this spread the grated cucumber making sure it is drained from all its waters.
  15. Place the smoked salmon so as to cover the entire surface.
  16. Place another nori, brush it with the wasabi/mayo and spread the last quantity of rice.
  17. Garnish with cucumber slices, smoked salmon and dill.
  18. Serve and enjoy.
