Lemon Chicken with Capers

  • 1.300 gr. / 2.8 lb chicken breasts, boneless, skinless
  • 2 garlic cloves, minced
  • 2 cups chicken stock
  • 1 cup dry white wine
  • 2 tbsp capers
  • 2 tbsp honey
  • Zest of one lemon
  • Juice of one lemon
  • Salt, pepper
  • 3 sprigs of thyme
  • 3 bay leaves
  • Flour for covering the chicken
  • Olive oil for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 200°C / 400°F.
  2. Cover the chicken breasts with flour and dust them to discard the excess.
  3. In an oven proof skillet pour the olive oil.
  4. Sauté the chicken breasts in medium heat until they take a light yellow color.
  5. Remove and set aside.
  6. In the same skillet add the garlic and sauté for half a minute.
  7. Pour the chicken stock, the wine, the honey, the juice and zest, the capers and all the herbs and spices and cook in medium heat for couple of minutes.
  8. Turn off the heat and add in this skillet the chicken breasts.
  9. Place in the oven and bake for about 40 minutes or until a golden color has formed on top of the chicken.
  10. Remove the thyme sprigs and bay leaves.
  11. If you want the sauce to be thicker, remove the chicken, place the skillet on the stove in medium heat and add 1 tbsp of corn starch dissolved in 1 tbsp of water.
  12. Serve with mustard potatoes
