Baked Chicken and Gnocchi in Halloumi Sauce

  • 700 gr. / 1.5 lb chicken breast, boneless, skinless, cut in small cubes
  • 1 small onion, sliced
  • 1 garlic clove, minced
  • 200 ml / 6.7 fl oz. cream cheese at room temperature
  • ½ cup milk
  • 100 gr. / 4 oz. halloumi cheese, grated
  • ¼ cup parmesan
  • 500 gr. / 1 lb gnocchi
  • Salt, pepper
  • ¼ cup cheddar cheese or halloumi cheese, optional for spreading on top
  • Olive oil for sautéing

  1. In a heavy skillet pour about 4 tbsp of olive oil and in medium heat sauté the onion until it softens.
  2. Add the garlic and continue to sauté until it becomes fragrant.
  3. Add the chicken pieces and sauté until no pink shows outside.
  4. Pour the milk and cream cheese and whisk to incorporate.
  5. Add the halloumi, parmesan, salt and pepper.
  6. Careful with the salt because halloumi and parmesan are both salted cheeses.
  7. Remove and set aside.
  8. In the meantime, and while the chicken is cooking make the gnocchi per instructions.
  9. Drain them but keep half cup of their water.
  10. Preheat oven to 200° C / 400° F.
  11. Take an ovenproof pan or Pyrex and arrange first gnocchi and then the chicken with the sauce.
  12. Pour the gnocchi water only if the sauce of the chicken is too thick and garnish with the cheddar or the halloumi.
  13. Bake until the cheese above has melted and taken a light color.
  14. Remove let it rest for five minutes and serve.
