Vegan Chocolate Cookies with Tahini

  • 1 cup coconut oil
  • 1 cup honey
  • ½ tsp vanilla extract
  • 3 ½ cups of all purpose flour
  • ½ cup cocoa
  • Tahini for filling them

  1. Preheat oven to 175°C / 345°F.
  2. In your stand mixer’s bowl pour the oil, honey and vanilla and mix to incorporate.
  3. In another bowl mix the dry ingredients.
  4. Throw the dry ingredients to the liquids and with the hook mix until crumbled dough is formed.
  5. Remove and knead to make a tough dough.
  6. Take a pan and cover it with parchment paper.
  7. Take another piece of parchment paper and put on top of it a big piece of the dough the size of a tennis ball.
  8. Cover with another parchment paper and roll with a pinning roll until the dough becomes a large circle with 3 mm / 0.1 in. thickness.
  9. Do the same for all the dough.
  10. Take a round mold, mine was 5cm / 2 in. and cut the dough in circles.
  11. With a spatula transfer them to the pan and when you finish them all, cut with a smaller mold half of them in the center.
  12. Bake for 12 to 15 minutes.
  13. Remove and let them cool.
  14. Take ½ tsp of the tahini paste and spread it on top of the uncut cookies.
  15. Place the cookies with the hole on top of the other ones and they are ready to be consumed.
