Vegan Chocolate Cookies with Tahini

- 1 cup coconut oil
- 1 cup honey
- ½ tsp vanilla extract
- 3 ½ cups of all purpose flour
- ½ cup cocoa
- Tahini for filling them
- Preheat oven to 175°C / 345°F.
- In your stand mixer’s bowl pour the oil, honey and vanilla and mix to incorporate.
- In another bowl mix the dry ingredients.
- Throw the dry ingredients to the liquids and with the hook mix until crumbled dough is formed.
- Remove and knead to make a tough dough.
- Take a pan and cover it with parchment paper.
- Take another piece of parchment paper and put on top of it a big piece of the dough the size of a tennis ball.
- Cover with another parchment paper and roll with a pinning roll until the dough becomes a large circle with 3 mm / 0.1 in. thickness.
- Do the same for all the dough.
- Take a round mold, mine was 5cm / 2 in. and cut the dough in circles.
- With a spatula transfer them to the pan and when you finish them all, cut with a smaller mold half of them in the center.
- Bake for 12 to 15 minutes.
- Remove and let them cool.
- Take ½ tsp of the tahini paste and spread it on top of the uncut cookies.
- Place the cookies with the hole on top of the other ones and they are ready to be consumed.
