Spicy Lentil Salad

Ingredients/ Συστατικά
  • 1 cup lentils
  • 1 tomato, cut in small cubes
  • 1 cucumber, cut in small cubes
  • 1 yellow bell pepper, cut in small cubes
  • 4 tbsp raisins
  • For the Dressing
  • 3 tbsp olive oil
  • 2 tbsp sherry vinegar
  • 1 tbsp honey
  • 1 tsp ground mustard
  • 1 ½ tsp salt
  • Pepper to your liking
  • ½ tsp cumin
  • ¼ tsp turmeric
  • ¼ tsp ground coriander
  • ¼ tsp ground cardamom
  • ⅛ tsp ground nutmeg
Instructions/ Εκτέλεση
  1. In a bowl mix all the dressing ingredients and put in the fridge while you cook the lentils.
  2. Rinse the lentils very well.
  3. In a pot place the lentils and add water enough to cover them and a bit more.
  4. Cover and bring to boil.
  5. When it starts to boil reduce heat and let them boil gently for about 25 to 30 minutes.
  6. They must not be very soft but rather al dente.
  7. Drain and rinse well under tab water.
  8. An hour before serving mix the lentils with the dressing and keep in the fridge until 15 minutes before serving.
