Country Chicken Greek Style

Ingredients/ Συστατικά
  • 4 chicken breasts, boneless, skinless cut lengthwise in thin slices
  • 1 yellow pepper, sliced
  • 2 onions, sliced
  • 250 gr. / 9 oz. mushrooms, sliced
  • 5 zucchinis, sliced in thick slices
  • Salt, pepper
  • ¼ cup + ½ cup dry red wine
  • ½ cup chicken stock
  • 100 gr. / 4 oz. tomato juice
  • 4 tsp olive paste
  • 1 tsp from each of the following: dried thyme, basil, oregano
  • ¼ cup olive oil plus some more for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 325° C / 435°F.
  2. In a skillet pour couple of tbsp. of olive oil and sauté first the onions, then add the peppers and finally the mushrooms until they become soft.
  3. Remove and set aside.
  4. Add the zucchinis and sauté until they take a nice golden color.
  5. Remove and set aside.
  6. In the same skillet pour another couple of tbsp. of olive oil and sauté in high heat the chicken pieces after you have salted and peppered them until semi done.
  7. Remove and set aside.
  8. In this same skillet pour the ¼ wine and scrape it.
  9. Take a deep pan and throw the vegetables.
  10. Add on top of them the chicken pieces.
  11. Salt and pepper them and add all the dried herbs.
  12. Scatter the 4 tsp of the olive paste all over the pan.
  13. Pour the tomato juice, the wine with the scrapes from the skillet, the ½ cup of stock, the other ½ cup of the red wine and the olive oil.
  14. Bake in a preheated oven for 20 minutes.
  15. Turn your oven to broiler and broil for another 3 to five minutes until everything has taken a nice golden color.
  16. Remove from the oven and drain all the juices.
  17. Put them in a deep pot in medium/high heat and add 1 hipping tbsp. of cornstarch dissolved in 1 tbsp of water to thicken the sauce.
  18. Pour the sauce on top and serve with rice, potatoes or pasta.
