Three Chocolate Cookies

Ingredients/ Συστατικά
  • 350 gr. / 12 oz. butter at room temperature
  • 200 gr. / 7 oz. caster sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 450 gr. / 16 oz. all purpose flour
  • 50 gr. / 2 oz. cocoa powder
  • 1 tsp baking powder
  • For the Filling
  • Choco tahini spread or Nutella
For the Covering
  • 250 gr. / 9 oz. semi-sweet chocolate
For the Choco Tahini Spread
  • 50 gr. / 1.7 oz. semi-sweet chocolate 50 to 60% cocoa
  • 150 gr. / 5 oz. tahini paste
  • 40 gr. 1.5 oz. sesame oil
  • 70 gr. / 2.5 oz. honey
  • 50 gr. / 1.7 oz. butter or margarine
Instructions/ Εκτέλεση
  1. Preheat oven to 175°C / 350°F.
  2. In your stand mixer add the butter and the caster sugar and mix to incorporate.
  3. Add the eggs one at a time and whisk to incorporate.
  4. Pour vanilla extract and mix.
  5. Throw the flour, the baking powder and the cocoa powder and fold with a spatula.
  6. You will have a soft dough.
  7. Put the dough in an icing bag.
  8. Take a pan and cover it with parchment paper.
  9. With the icing bag make small sticks about 8 cm / 3 in. long and 1.5 cm / 0.5 in. thick leaving about 2 cm / 1 in. distance in between them.
  10. Bake for about 12 minutes.
  11. Remove and let them cool.
  12. While cookies cooling down, melt the chocolate for the covering and let it cool until it arrives to 35°C / 95°F.
  13. You can measure the temperature with a bakery thermometer.
  14. Turn the cookies with their flat side looking up.
  15. Put the choco tahini spread or the Nutella in an icing bag and put some quantity in half of the cookies.
  16. Cover with the rest and bathe half of them in the melted chocolate.
  17. Place them in a parchment paper and let them cool completely.
  18. They are ready to be served.
For the Choco Tahini Spread
  1. Melt chocolate in a glass bowl in microwave as follows.
  2. Place the pieces in the glass bowl and put for 30 seconds.
  3. Remove and mix.
  4. Repeat this procedure just until chocolate has melted completely.
  5. In another bowl mix tahini with the sesame oil.
  6. Add the honey and the melted chocolate and mix again to incorporate.
  7. Add the butter and mix well so there are no lumps.
  8. Put in a small vase in cool place and use it as a spread on toasted bread, or on waffles, pancakes, crepes etc.
  9. I made two vases.
  10. It is kept well for couple of weeks.
