Not Your Ordinary Banana Cake

For the Filling
  • 150 gr. / 5 oz. heavy whipped cream
  • 150 gr. / 5 oz. cream cheese
  • ¼ cup caster sugar
  • 1 tsp espresso powder
  • 2 tsp warm water
For the Banana Cake
  • 125 gr. / 4.5 oz. softened butter
  • 220 gr. / 8 oz. sugar
  • 3 large eggs
  • 250 gr. / 9 oz. flour
  • 2 tsp baking powder
  • 50 gr. / 2 oz. cocoa powder
  • 180 gr. / 6 oz. crème fraiche or sour cream
  • 3 Cretan bananas or 2 large ordinary ones, mashed

For the Filling
  1. In your stand mixer whip the cream cheese a bit to soften and add the caster sugar.
  2. Whip to incorporate.
  3. Mix the espresso powder with the warm water.
  4. Add the whipped cream and the espresso and mix with a spatula to incorporate.
  5. Put in the fridge while making the cake.
For the Banana Cake
  1. Preheat oven to 180°C / 350°F.
  2. In your stand mixer add the butter and sugar and mix until fluffy about 2 minutes.
  3. Add the eggs one at a time and mix after each one to incorporate.
  4. Sift the flour along with the baking powder and cocoa powder and add them to your batter and whisk gently to incorporate.
  5. Add the crème fraiche or sour cream and the mashed bananas and mix.
  6. Take a springform, butter it and flour it.
  7. Divide cake batter in two portions.
  8. Pour the first one in the springform.
  9. Take a piping bag and add the cream cheese batter.
  10. On the cake batter pipe the cream cheese batter just like in the picture.
  11. Cover with the rest of the cake batter.
  12. Bake for about 30 to forty minutes or until the knife comes out clean where the cake batter is.
  13. Remove from the oven, let cool and unmold.
  14. Cut and serve.
