Comfort Chicken Breasts with Wild Mushrooms and Cheese

Ingredients/ Συστατικά
  • 3 chicken breasts, skinless, boneless, cut as butterfly
  • 1 tomato, cut in cubes
  • 1 yellow and 1 orange bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves minced
  • 40 gr. dried wild mushrooms, soaked in hot water
  • 1 tsp dried basil
  • 4 basil leaves, chopped
  • A small bunch of parsley, chopped
  • ¼ cup light cream
  • ½ cup white wine
  • ⅔ cup chicken broth
  • 50 gr. cream cheese
  • Salt and pepper
  • 1 cup grated cheese, use whatever you have handy as long as it melts easily
  • Olive oil for sautéing

  1. In an oven pour couple of tbsp of olive oil and sauté the chicken breasts in medium high heat.
  2. Sauté two minutes per side and then remove and set aside.
  3. In the same skillet add couple of tbsp of olive oil and sauté the onions and the peppers until they start to soften.
  4. Add the mushrooms after draining them and continue to sauté for a minute.
  5. Pour the wine and let boil until it is almost evaporated.
  6. Pour the broth and return the breasts to the skillet.
  7. Salt and pepper and add the tomato cubes.
  8. Lower heat to medium and let boil for 10 to 15 minutes.
  9. Whisk the cream with the cream cheese and pour it on top.
  10. Add the basil leaves, dried basil and the parsley and spread the cup of cheese.
  11. Let boil for 5 minutes and then turn on the broiler.
  12. Broil for about 5 minutes or until the cheese has melted completely and taken a nice golden color.
  13. Remove let rest for 5 minutes and serve.
