Creamy Chicken Pasta with Sun Dried Tomatoes

Ingredients/ Συστατικά
  • 500 gr. / 1 lb. linguini
  • 2 chicken breasts
  • 1 onion chopped
  • 1 garlic clove minced
  • 200 gr. / 7 oz. mushrooms sliced
  • 2 tbsp all-purpose flour
  • ¼ cup sun dried tomatoes in their oil, drained and roughly chopped
  • 1 cup chicken stock
  • 200 ml / 7 fl oz. light cream
  • 50 ml / 2 fl oz. milk
  • 2 tbsp double concentrated tomato paste
  • 1 tbsp sugar
  • 1 tsp dried oregano
  • 6 to 7 basil leaves chopped
  • 60 gr. / 2 oz. cream cheese
  • 1 cup any melting cheese you like. You can also put ½ cup parmesan and ½ cup any melting cheese
Instructions/ Εκτέλεση
  1. In a large pot add water and boil pasta according to your liking.
  2. While the process of making the pasta, you make the sauce.
  3. In a deep non-stick pan drizzle couple of tbsp of olive oil and in medium heat cook the chicken until it is completely done about 8 minutes total, 4 minutes each side.
  4. Remove and set aside.
  5. In the same skillet add couple more tbsp of olive oil and sauté the onions in medium/high temperature until they are soft about 3 minutes.
  6. Add the garlic and mushrooms and continue to sauté for another 2 minutes.
  7. Add the sun-dried tomatoes and the flour and continue to sauté for another two minutes.
  8. Pour the stock, the cream and the milk, lower heat to medium and let it boil gently for couple of minutes.
  9. Add sugar, oregano and tomato paste and continue to boil for couple of minutes.
  10. Cut the chicken breasts in small cubes and throw it to the boiling sauce.
  11. Add the cheese and stir to melt.
  12. Finally, a minute before you take it off the stove, throw the basil leaves and stir.
  13. Drain the pasta and toss it to the sauce.
  14. Serve immediately.
