Miso Chicken with Eggplant

Ingredients/ Συστατικά
  • 3 chicken breasts cut in small cubes
  • 2 medium eggplants
  • 2 green peppers, julienned
  • salt, pepper
For the Sauce
  • 4 tbsp white miso
  • 4 tbsp mirin
  • 2 tbsp honey
  • 4 tbsp low sodium soy sauce
  • 2 garlic cloves, minced
Instructions/ Εκτέλεση
  1. Cut the eggplants in cubes and sprinkle on them some salt.
  2. In a drainer leave them for 20 minutes to let go all their waters.
  3. In the meantime, in a small bowl combine all the sauce ingredients and put it aside.
  4. Heat two tbsp of sesame oil in a wok.
  5. Add the peppers and sauté until they start to soften.
  6. Add the chicken, salt it and pepper it and sauté until is half done about 2 minutes.
  7. Following, add the eggplant and stir-fry until they are fully cooked about 2 minutes.
  8. At the end add the sauce lower heat to medium/low and let cook for 2 to 3 minutes.
  9. Serve with rice or noodles.
