Miso Chicken with Eggplant

- 3 chicken breasts cut in small cubes
- 2 medium eggplants
- 2 green peppers, julienned
- salt, pepper
- 4 tbsp white miso
- 4 tbsp mirin
- 2 tbsp honey
- 4 tbsp low sodium soy sauce
- 2 garlic cloves, minced
- Cut the eggplants in cubes and sprinkle on them some salt.
- In a drainer leave them for 20 minutes to let go all their waters.
- In the meantime, in a small bowl combine all the sauce ingredients and put it aside.
- Heat two tbsp of sesame oil in a wok.
- Add the peppers and sauté until they start to soften.
- Add the chicken, salt it and pepper it and sauté until is half done about 2 minutes.
- Following, add the eggplant and stir-fry until they are fully cooked about 2 minutes.
- At the end add the sauce lower heat to medium/low and let cook for 2 to 3 minutes.
- Serve with rice or noodles.
