Beef Burritos

  • 8 flour tortillas
  • ½ kilo / 1 lb ground beef
  • 1 garlic clove, minced
  • 2 onions, sliced
  • 1 red and 1 orange bell pepper, sliced (for extra hot add jalapenos)
  • 4 tbsp taco or fajita spice
  • 1 cup tomato juice
For the Topping of Burritos
  • 1 jar taco sauce (mild or hot)
  • ½ cup tomato juice
  • 4 cups cheddar or any other melting cheese, grated
Instructions/ Εκτέλεση
  1. In a skillet pour couple of tbsp of olive oil and in medium/high heat sauté the onions and peppers until they start to soften.
  2. Add the garlic clove and sauté until fragrant.
  3. Stir in the ground beef and sauté until it changes color.
  4. Pour the tomato juice, fajita spice, some salt and pepper according to your liking.
  5. Lower heat to medium/low and let the ground meat boil for about 15 to 20 minutes.
  6. Remove from fire and set aside.
  7. Warm the tortillas in the microwave for 30 seconds.
  8. Take a rectangular pan or Pyrex and spread 3 tbsp of the taco sauce.
  9. Fill the tortillas with ground beef and some cheddar cheese.
  10. Place them one next to the other and pour on top the rest of the taco jar and the tomato juice.
  11. Spread the rest of the cheddar cheese and bake in a preheated oven at 175°C / 350°F for about 30 to 40 minutes or until the cheese on top has melted and taken a nice golden color.
  12. Remove from the oven and serve with refried beans and rice.
