Mediterranean Chicken Meatballs with Gnocchi

- ½ kilo / 1 lb ground chicken meat
- 1 cup grated cheese i.e. gouda, edam or any cheese you have handy
- ¾ cup breadcrumbs
- ½ cup milk
- 1 egg
- ¼ cup olive oil
- 1 onion, minced
- 1 garlic clove minced
- Salt, pepper
- ½ tsp of each dried basil, oregano, thyme, sage
- 500 gr. / 1 lb. tomatoes in their juice
- 200 gr. / 7 oz. fresh mushrooms, sliced
- 1 onion, minced
- 1 garlic clove, minced
- 1 cup red wine
- 1 tbsp sugar
- Salt, pepper
- ½ tsp dried basil
- ½ tsp dried oregano
- 1 kilo / 2 lb. potato gnocchi
- 1 cup melting cheese
- Mix all the ingredients in a bowl and make small rounded meatballs.
- Preheat oven in 200˚C/ 400˚F.
- Bake the meatballs until half done about 10 minutes.
- In the meantime, prepare the sauce.
- In a pot pour some olive oil and in medium high heat start sautéing the mushrooms.
- When half done add the onion.
- Sauté until it becomes soft and then add the garlic.
- Sauté until fragrant a few seconds.
- Pour the wine and deglaze.
- When ⅔’s pf it has evaporated pour the tomatoes cut in thick chunks and all the herbs and spices.
- Add the meatballs and lower the heat to medium low.
- Cook for 15 minutes.
- In the meantime, prepare the gnocchi according to instructions.
- Place the gnocchi in a pan and on top place the meatballs and pour the sauce.
- Sprinkle the melting cheese and place the pan under the broiler until the cheese melts and a nice golden color is spread to everything.
- Be careful and watch carefully the food because a few more minutes may end up in a burnt meal.
