Pork Tenderloin with Apples in Beer and Curry Sauce

- Two pork tenderloins cut in slices
- 1 onion sliced
- 2 apples cut in cubes
- 2 tbsp dark brown sugar
- 1 cup beef stock
- ¼ cup raisins
- ¼ tsp turmeric
- ¼ tsp cardamom
- ¼ tsp ground coriander
- ¼ tsp caraway seeds
- 1 ½ tsp curry powder
- Pinch of saffron
- ½ cup beer
- Salt and pepper
- In a deep skillet pour couple of tbsp of olive oil and butter.
- Sauté the pork slices until half done.
- Remove and set aside.
- In the same skillet put the onion and sauté until it starts to soften.
- Add the apples and sugar and continue to sauté for about 5 minutes.
- Pour the beef stock and all the spices.
- Salt and pepper.
- Lower heat to medium low and simmer until liquid has lost half its volume.
- Turn fire to medium and add the raisins and beer.
- Let boil for a few minutes until sauce starts to thicken.
- Remove and serve over basmati rice.
