Beef Fillet with Creamy Thyme Sauce

Ingredients/ Συστατικά
  • 6 beef fillets
  • 200 gr. / 7 oz. White mushrooms, sliced
  • 1 shallot, finely chopped
  • 1 garlic clove, finely minced
  • ⅔ cup beef stock
  • 2 anchovy fillets
  • 1 tbsp mustard
  • 2 tsp Worcestershire sauce
  • 3 thyme sprigs
  • 200 ml / 7 fl oz. light cream
Instructions/ Εκτέλεση
  1. In a non-stick pan pour couple of tbsp of olive oil and in medium/high heat sauté the mushrooms until they are done.
  2. Remove and set aside.
  3. In the same skillet pour couple of more tbsp of olive oil and in medium/high heat sauté the onion, garlic and the thyme sprigs.
  4. When the onion starts to soften pour the beef broth and the anchovies and let boil for a minute.
  5. Remove the thyme sprig.
  6. With a stick blender mash everything so you will have a smooth kind of thick batter.
  7. Add the mustard, Worcestershire sauce, mushrooms and light cream and let boil until it starts to thicken a bit.
  8. Because the sauce has anchovies and Worcestershire sauce it is salted but if you want more you can add some at this point along with pepper.
  9. While the sauce is boiling in another pan cook the beef fillets according to your liking.
  10. Serve them with the sauce on top.
