Orange Scented Ravanì

For the cake
  • 2 cups fine semolina
  • 1 ½ cup all-purpose flour
  • 1 cup sugar
  • 1 cup butter or margarine
  • 5 eggs
  • Juice of one orange (don’t throw the squeezed orange parts, you will need them for the syrup)
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
For the syrup
  • 3 cups sugar
  • 3 cups water
  • Peels of one orange
Instructions/ Εκτέλεση
  1. Shift the flour and mix it with the semolina, the soda and the baking powder.
  2. In a mixer put the butter or margarine and mix very well until it becomes pale.
  3. Add the sugar and continue to mix.
  4. Divide the egg yolks from the whites.
  5. Throw the egg yolks one by one to the mixer.
  6. Add the juice, the vanilla and the zest of the orange.
  7. In a separate bowl beat the egg whites to make a meringue.
  8. Put the mixer to the lower speed and we throw the flour and the meringue in small portions in turn.
  9. Butter and flour a round medium sized pan and throw the batter.
  10. Bake in a preheated oven at 175° C/ 345° F for about ¾ of an hour or until the knife comes clean.
  11. Let it cool for 15 minutes.
For the syrup
  1. Put the sugar, the water and the orange peels in a pot in high heat.
  2. When it starts to boil lower the heat to medium and boil for 5 minutes.
  3. Remove and with a ladle pour slowly and evenly the hot syrup over the ravanì. Let it stand for 15 minutes and serve.
  4. You could add a dollop of vanilla ice cream. De-li-cious!
