Orange Scented Ravanì

- 2 cups fine semolina
- 1 ½ cup all-purpose flour
- 1 cup sugar
- 1 cup butter or margarine
- 5 eggs
- Juice of one orange (don’t throw the squeezed orange parts, you will need them for the syrup)
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp baking soda
- 3 cups sugar
- 3 cups water
- Peels of one orange
- Shift the flour and mix it with the semolina, the soda and the baking powder.
- In a mixer put the butter or margarine and mix very well until it becomes pale.
- Add the sugar and continue to mix.
- Divide the egg yolks from the whites.
- Throw the egg yolks one by one to the mixer.
- Add the juice, the vanilla and the zest of the orange.
- In a separate bowl beat the egg whites to make a meringue.
- Put the mixer to the lower speed and we throw the flour and the meringue in small portions in turn.
- Butter and flour a round medium sized pan and throw the batter.
- Bake in a preheated oven at 175° C/ 345° F for about ¾ of an hour or until the knife comes clean.
- Let it cool for 15 minutes.
- Put the sugar, the water and the orange peels in a pot in high heat.
- When it starts to boil lower the heat to medium and boil for 5 minutes.
- Remove and with a ladle pour slowly and evenly the hot syrup over the ravanì. Let it stand for 15 minutes and serve.
- You could add a dollop of vanilla ice cream. De-li-cious!
