Mushroom Satays

Ingredients/ Συστατικά
  • 500 gr. / 1 lb Medium button mushrooms
  • 1 red bell pepper, cut in medium squared pieces
  • 1 yellow bell pepper, cut in medium squared pieces
  • ⅓ cup balsamic vinegar
  • 3 tbsp honey
  • 3 tbsp less sodium soy sauce
  • 1 garlic clove, minced
  • Skewers for the satay
Instructions/ Εκτέλεση
  1. In a large bowl mix the vinegar, honey, soy sauce and garlic clove.
  2. Add the mushrooms and peppers and marinade for an hour.
  3. In the meantime, place the skewers to water for the same amount of time.
  4. After one hour remove the mushrooms and peppers from marinade and thread them alternating with the peppers.
  5. In a sauce pan put the marinade and boil for about 5 minutes to thicken.
  6. Place the skewers under the broiler and broil for about 4 minutes per side depending on your oven.
  7. You can grill them on the BBQ if you can, I am sure they will become even tastier.
  8. Serve the skewers with the sauce aside!
