Orange Chicken with Rice Noodles

- 3 tsp orange zest
- ¾ orange juice
- 1 tbsp sugar
- 1 tbsp honey
- 6 tbsp vegetable stock
- 3 tbsp light soy sauce
- 1 egg
- 1 ½ tsp salt
- ¼ tsp green and red pepper
- ½ cup all-purpose flour
- ¼ cup cornstarch
- ¼ cup water
- 700 gr. Chicken breasts cut in strips
- 2 tsp ground ginger
- 2 garlic cloves, minced
- 1 green onion, chopped
- 1 green bell pepper, cut in squares
- 3 tbsp rice wine
- 1 tbsp cornstarch, 2 tbsp water
- 2 tbsp sesame oil
- 1 cup sesame oil
- In a non-reactive bowl mix all the ingredients of the sauce and set aside.
- In another bowl mix all the ingredients of the frying batter and stir until you have a somewhat thick batter.
- Place the chicken strips in the bowl where the frying batter is and mix until they are covered with it.
- In a frying pan put about 1 cup of sesame oil in 165° C / 330° F and fry the chicken in batches approximately 2 to 3 minutes per batch.
- Remove and put aside.
- Take a wok or any other frying pan and add 2 tbsp of sesame oil. Add the peppers, garlic and ginger and stir fry for about 5 minutes.
- Pour the rice wine and the orange sauce.
- Sauté for a minute and then add the chicken pieces. Lower heat and add the 1 tbsp of cornstarch dissolved in the 2 tbsp of water.
- Let simmer for 10 minutes and then serve over rice, egg noodles or as in our case over rice noodles.
