Citrus Pulp Cake

- 1 medium orange
- 1 lemon
- 150 gr. / 5 oz. raw almonds
- 140 gr. / 5 oz. all purpose flour
- 1 tbsp baking powder
- 4 large eggs, at room temperature
- ½ tsp salt
- 330 gr. / 11.5 oz. sugar
- 146 gr. / 5 oz. olive oil
- 125 gr. / 4.5 oz. semi sweet chocolate
- 50 gr. / 2 oz. milk
- Put the orange and the lemon after you have rinsed them thoroughly in a saucepan and cover with water.
- Bring to boil and then reduce heat to low and simmer for 30 minutes, drain and cool them.
- Meanwhile, toast the almonds.
- Preheat oven to 150° C / 300° F and set a rack in the middle position.
- Put the almonds in a baking sheet and bake until lightly golden five to ten minutes.
- Put them in the food processor and process until finely chopped.
- Set aside and let them cool completely.
- Preheat oven to 175° C / 350° F and butter and flour a 24cm / 9 in. spring form pan.
- When the fruits are cool, cut the lemon in half and scoop out and discard the pulp and seeds.
- Cut the orange in half and discard the seeds.
- Put the fruits in the food processor and process them until they form a pulp.
- In a mixer combine the eggs and the salt.
- Mix for a minute and then add the sugar and mix until it becomes pale and foamy.
- Fold the flour and baking powder and mix at the lowest speed.
- Add the fruits, almonds and oil and mix just until they are incorporated.
- Pour the batter into the spring form pan and bake until the knife you insert comes out clean.
- I divided the batter in two spring forms and it took me 25 minutes.
- Take it out of the oven let it cool a little bit and unmold it.
- in the meantime make the ganache by putting the chocolate and milk in a glass bowl and melting it in the microwave oven.
- Spread the chocolate on top of the cake.
