Have you ever noticed that when one bad thing happens, then a series of other bad things follow? This has happened to me as well. After my father-in-law’s death my mother had a small accident in her knee and now her leg hurts very much. This means that she was and still is unable to pick my son up from school, feed him and keep him at her house while I am at work.

I can tell you the last couple of weeks have been really tough for me and I do not know when the situation will return back to normal. It seems to me that 24 hours are not enough to do everything I have to. Needleless to say that blogging has gone at the bottom of all things and this is makes me really sad.
Today I had some time free and I thought I could give you the recipe for this vinaigrette I made a week ago and it was really good. The recipe comes from Vagelis Driskas a very well known Greek chef.
I hope that in the next week or two, I will be able to return to my normal routine and start following you at a regular basis as I used to. Until then bare with me and just keep your fingers crossed.
Green Salad with Sun-Dried Tomato Vinaigrette
Ingredients
For the salad
1 lettuce
5 green olives
2 fire roasted red peppers or Florina peppers
1 green pepper

For the vinaigrette
½ cup olive oil
3 tbsp balsamico
3 sun-dried tomatoes
1 tsp dried basil
Salt and pepper

Instructions
In the blender mix all the dressing ingredients and put them in a glass container. Place the dressing in the fridge and let stay for couple of hours.
Cut the salad ingredients and place them in a bowl.
Take out stir really well and pour it over the salad.
