Green and Red Salad

 

As I told you my friends sent me a few recipes with pomegranate. And as I promised, I will start posting as soon as I make them. This recipe was sent to me by a friend of mine, Efi. Efi is a lawyer and a friend of mine since high school. We used to meet every summer as our home cottages were near by. Whenever we meet we always recollect those days of innosence and laugh. She follows my blog and sends me e-mails with her comments. She is single and thus she doesn’t have time to cook. This salad is a perfect meal on a hectic day along with a rotisserie chicken.

 

Green and Red Salad
Ingredients
1 lettuce
1 green pepper
seeds of 1/2 pomegranate
a few leafs of arugula
3/4 cup croutons
For the sauce
2 tbsp whole grain mustard
2 tbsp water
2 tbsp honey
1 1/2 sherry balsamico
4 tbsp olive oil

 

Instructions
We cut the greens and put them in a salad bowl. Above them we throw the pomegranate seeds and croutons. We put all the sauce ingredients in a bowl and wisk very well. When all ingredients are incorporated we put on salad. This goes very well with grilled meats. The sauce my friend uses is very simple just olive oil and balsmico, so I thought to twist it a little bit and I used a dressing recipe I found in Leites Culinaria.
