I always have a problem, as to what to give my son at school as a snack. He always gets bored, if I do not change his snack often. So, I always try to have a variety of options. These pizza muffins are ideal for such a case. They are also great for a party or taking them on a trip. I found this recipe on Hungry for Life a greek site with a collection of recipes. I made my alterations and I think the end result is worth the time and effort.
Pizza Muffins
Ingredients
4 cups grated yellow cheese ( I used 2 cups regato and 2 cups the graviera I had from Crete)
4 slices of bacon
5 slices of ham
1 red pepper
1 onion finelly diced
1 egg
1/2 cup corn oil
3 tbsp ketchup
pepper, pinch of oregano
2 cups self rise flour
Instructions
Preheat the oven to 175 C.
In a bowl we mix all the ingredients except the egg and flour. In the end we add the egg slightly whisked and the flour and we knead for one minute to incorporate everything. We take a baking sheet and cover it with parchment paper slightly oiled. We shape balls in the size of a lime and flatten them a little bit and place them on the baking sheet. We bake until they become golden around 20 minutes. With these ingredients we can make between 20 to 25 pizza muffins. Good Luck.
