I am sure you wonder what has happened with me and I post so often. The reason behind this is that for the past few days our ERP system at work has crashed and basically I do not have so many things to do. So, I have plenty of time to post. Enjoy it while it lasts! Yesterday, I wanted to have a salad for dinner so I tried to create one that would be filling and healthy. The salad is my creation, the dressing comes from Top Secret Recipes.

Sweet and Sour Cabbage Salad

Ingredients

For the salad
1/4 of a cabbage shredded
1/4 cup raisins
1/2 can corn
1/2 apple diced
1/4 cup any yellow cheese diced

For the sauce
1/4 cup red wine vinegar
3 tbsp granulated sugar
3 tbsp honey
1/2 lime juice
1 tbsp balsamic vinegar
1 tbsp dijon mustard
1/2 tsp salt
1/4 tsp dried Italian herb blend
1/4 tsp dried tarragon
1 garlic clove smashed
1 cup olive oil

Instructions

In bowl throw the cabbage, the raisins, the corn, the apple and the cheese.For the sauce put all the ingredients except the oil in a blender and mix for a minute. Then add the oil and mix again until incorporated. Put in the fridge for an hour and then throw 4 tbsp of this on top of the salad. Be careful the dosage of the sauce is for many salads. It can be stored in the fridge for up to a week.
