I am sure you wonder what has happened with me and I post so often. The reason behind this is that for the past few days our ERP system at work has crashed and basically I do not have so many things to do. So, I have plenty of time to post. Enjoy it while it lasts! Yesterday, I wanted to have a salad for dinner so I tried to create one that would be filling and healthy. The salad is my creation, the dressing comes from Top Secret Recipes.

Sweet and Sour Cabbage Salad

For the salad
1/4 of a cabbage shredded
1/4 cup raisins
1/2 can corn
1/2 apple diced
1/4 cup any yellow cheese diced

For the sauce
1/4 cup red wine vinegar
3 tbsp granulated sugar
3 tbsp honey
1/2 lime juice
1 tbsp balsamic vinegar
1 tbsp dijon mustard
1/2 tsp salt
1/4 tsp dried Italian herb blend
1/4 tsp dried tarragon
1 garlic clove smashed
1 cup olive oil

In bowl throw the cabbage, the raisins, the corn, the apple and the cheese. For the sauce put all the ingredients except the oil in a blender and mix for a minute. Then add the oil and mix again until incorporated. Put in the fridge for an hour and then throw 4 tbsp of this on top of the salad. Be careful the dosage of the sauce is for many salads. It can be stored in the fridge for up to a week.
