I always try to find recipes that aren’t too difficult, aren’t too much and do not need so much time to prepare them. I had couple of bananas that have seen better days, I am sure, and I wanted to do something with them. I unburied this recipe from my pile of recipes that occupies 1/3 of our bookshelves ( I believe that one day I will wake up and I will find the bookshelves empty. My husband, I know eventually, he will somehow manage to get rid of them, while I sleep)and I decided to do it. This is a nice recipe and the taste of bananas is not overwhelming. It is definitely a keeper. I adapted the recipe from Canadian Living.

Banana Chocolate Chip Muffins

Ingredients
2 ½ cups all-purpose flour
1 cup packed brown sugar
1 ½ baking powder
1 tsp baking soda
½ tsp salt
2 eggs
1 cup yogurt
250 gr. mashed bananas
1/3 cup corn oil
1 tsp vanilla
200 gr. chocolate chips

Instructions

In a bowl, whisk together flour, sugar, baking powder, baking soda and salt.
In the mixer beat eggs, add the yogurt, the bananas, oil and vanilla. Pour over dry ingredients. Stir just until dry ingredients are moistened. Sprinkle the chocolate chips.
Preheat oven to 175°C. Grease a twelve muffin tin and a six muffin tin and pour the batter.

Bake for 20 to 25 minutes until the top is golden and the knife comes out clean.
