Eggplant Bites

Saint Sophia in Constantinople (Istanbul) is one of the most eminent buildings in the city. The name means the Holy Wisdom of God and is dedicated to it.

The first temple was founded in 300 A.C. from Emperor Constantinos who also transferred the capital of Roman Empire from Rome to Constantinople. In 360 A.C. the temple was completed by Constantinos’ son. The church was destroyed twice and eventually Justinian would build it again, but in a more elaborate and magnificent way, making it a staple of the capital and the Byzantine Empire. To make this tremendous project it took six years, 10.000 workmen and 320.000 lire or about 120.000.000 euros. For its building, things came from all over the world and for decorating it gold, silver and gems were brought from places where Greeks were flourishing.

The openings took place in 537 A.C. and Justinian, the Emperor, when he saw the tremendous building shouted: “I glory God for making me worthy of building this temple! I defeated you Solomon”.

For over thousand years Saint Sophia will be the cradle of Orthodox Christians. In there, people will live triumph celebrations, crowning of new emperors and tragedy mourning. The last rite took place in 29th of May of 1453. The last emperor of Byzantine Empire, Constantinos Palaeologus prayed along with the people and apologized to them for any mistakes or inexpediencies he made. He then left to fight the Turks. He died in the battle and Constantinople fell eventually in the hands of the Ottomans. From then on, all Greece became part of the Ottoman Empire from 1453 to 1821, when Greeks started a revolution which led to their gradual freedom in 1828, when the first Greek State was established.

After the conquest of Constantinople, Turks made Saint Sophia a mosque. Kemal Ataturk transformed it into museum and it remains as this since today.

My grandfather from my mother’s side was from Constantinople. He was from the Greeks lived there and he was a very educated man for that age. As a kid, I used to mess with his things and because he was such a meticulous person he got really upset with me. I used to laugh and then my grandma, who was also from Asia Minor, came to my rescue and used to scold him for scolding me! I have some beautiful memories of my grandparents and I treasure them like gems!

Eggplant Bites

One of the dishes, coming from Asia Minor, that my grandfather loved was “Melitzanes Papoutsakia” which means Eggplant Little Shoes. It is actually eggplant cut in half, taken out a bit of their flesh, stuff them with cooked ground beef, spread béchamel sauce on top and bake them in the oven. I thought I should change a bit the original recipe, although to tell you the truth, is to die for, and make it somewhat lighter and with less calories. So, I made these eggplant little bites, with no béchamel, just cooked ground beef and a delicious tomato sauce. They were the perfect appetizers and since I had my parents over, they had the chance to try them and give me the green light to post about them.

Little Eggplant Bites

Ingredients/ Συστατικά
  • 4 eggplants, cut in slices 1cm / half inch thick
For the Ground Meat
  • 250 gr. / 9 oz. ground beef
  • 1 small onion, chopped
  • ⅓ cup tomato juice
  • ¼ cup sweet wine, I used Mavrodafni
  • A hipping ¼ tsp nutmeg, same for cinnamon
  • Salt and pepper
  • 2 bay leaves
  • Couple of tbsp. of olive oil
For the Tomato Sauce
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 1 ½ cup tomato juice
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp thyme
  • 1 tbsp fresh basil, chopped
  • 1 tbsp sugar
  • Salt and pepper
  • ¼ cup sweet wine, I used Mavrodafni again
  • About 50 gr. / 2 oz. of Halloumi cheese, grated
Instructions/ Εκτέλεση
  1. Wash the eggplants and put them in a drainer adding salt on top of them to release their bitterness.
  2. Let them stay for half an hour.
For the Ground Meat
  1. In a pot add a few tbsp. of olive oil and sauté the onion and ground beef in medium high heat.
  2. Add the tomato juice, the wine, salt and pepper, nutmeg, cinnamon and the bay leaves and lower heat to medium low.
  3. Boil for about 20 minutes or until the meat has absorbed most of its liquids.
  4. Remove and put aside.
For the Tomato Sauce
  1. In a pot pour couple of tbsp. of olive oil and sauté the onion and garlic in medium high heat.
  2. Add the tomato juice, wine, oregano, basil, thyme, fresh basil, sugar, salt and pepper.
  3. Lower to low and boil for about 15 minutes.
  4. Remove and put aside.
  5. Preheat oven to 200°C / 400°F.
  6. Place all the eggplant slices on a parchment paper covered pan and bake them until they soften about 20 minutes.
  7. Take them out of the oven.
Assembly
  1. Take a clean pan and pour one or two tbsp. of the tomato sauce.
  2. Add half of the eggplant slices.
  3. Take a small spoon and add on top of them some of the ground beef.
  4. Add some ground halloumi on top of it.
  5. Cover with the rest of the eggplant slices.
  6. Take a spoon and pour on each one of the bites some tomato sauce.
  7. On top of it add some grated halloumi again.
  8. If you have leftover sauce just pour it around the bites.
  9. Place them in the oven and bake them until the halloumi has melted and taken a nice golden color.

Μπουκίτσες Μελιτζάνας

Ingredients/ Συστατικά
  • 4 μελιτζάνες, κομμένες σε φέτες πάχους 1cm
Για τον Κιμά
  • 250 γρ. μοσχαρίσιο κιμά
  • 1 μικρό κρεμμύδι, ψιλοκομμένο
  • ⅓ φλ. χυμό ντομάτας
  • ¼ φλ. γλυκό κρασί, χρησιμοποίησα Μαυροδάφνη
  • ¼ κ.γ. γεμάτο, μοσχοκάρυδο, το ίδο για την κανέλα
  • Αλάτι και πιπέρι
  • 2 φύλλα δάφνης
  • 2 κ.σ. ελαιόλαδο
Για τη Σάλτσα Ντομάτας
  • 2 κρεμμύδια, ψιλοκομμένα
  • 2 σκελίδες σκόρδο, λιωμένα
  • 1 ½ φλ. χυμό τομάτας
  • ½ κ.γ. ρίγανη
  • ½ κ.γ. βασιλικό
  • ½ κ.γ. θυμάρι
  • 1 κ.σ. φρέσκο βασιλικό, ψιλοκομμένο
  • 1 κ.σ. ζάχαρη
  • Αλάτι και πιπέρι
  • ¼ φλ. γλυκό κρασί, χρησιμοποίησα μαυροδάφνη και πάλι
  • Περίπου 50 γρ. τυρί χαλούμι, τριμμένο
Instructions/ Εκτέλεση
  1. Πλύντε τις μελιτζάνες και βάλτε τις σε στραγγιστήρι προσθέτοντας αλάτι για να ξεπικρίσουν.
  2. Αφήστε για μισή ώρα.
Για τον Κιμά
  1. Σε μια κατσαρόλα, προσθέστε μερικές κουταλιές ελαιόλαδο και σοτάρετε το κρεμμύδι και τον κιμά σε μέτρια/ψηλή θερμοκρασία.
  2. Προσθέστε το χυμό ντομάτας, το κρασί, αλάτι και πιπέρι, το μοσχοκάρυδο, την κανέλα και τα φύλλα δάφνης και χαμηλώστε τη φωτιά στο χαμηλό.
  3. Βράστε για περίπου 20 λεπτά ή μέχρι το κρέας να έχει απορροφήσει τα περισσότερα από τα υγρά.
  4. Βάλτε στην άκρη.
Για τη Σάλτσα Ντομάτας
  1. Σε μια κατσαρόλα ρίξτε δύο κουταλιές ελαιόλαδο και σοτάρετε το κρεμμύδι και το σκόρδο σε μέτρια/ψηλή θερμοκρασία.
  2. Προσθέστε το χυμό ντομάτας, κρασί, ρίγανη, βασιλικό, θυμάρι, φρέσκο βασιλικό, ζάχαρη, αλάτι και πιπέρι.
  3. Χαμηλώστε τη φωτιά στο χαμηλό και βράστε για περίπου 15 λεπτά.
  4. Αφαιρέστε και βάλτε στην άκρη.
  5. Προθερμάνετε το φούρνο στους 200° C.
  6. Τοποθετήστε όλες τις μελιτζάνες πάνω σε χαρτί ψησίματος μέσα σε ένα ταψί και ψήστε μέχρι να μαλακώσουν περίπου 20 λεπτά.
  7. Βγάλτε από το φούρνο.
Συναρμολόγηση
  1. Πάρτε ένα καθαρό ταψί και ρίξτε ένα με δύο κουταλιές της σάλτσας ντομάτας.
  2. Προσθέστε τις µισές μελιτζάνες.
  3. Πάρτε ένα μικρό κουτάλι και πάνω από κάθε μελιτζάνα βάλτε λίγο κιμά.
  4. Προσθέστε λίγο χαλούμι, από πάνω.
  5. Σκεπάστε με τις υπόλοιπες μελιτζάνες.
  6. Πάρτε ένα κουτάλι και ρίξτε σε κάθε μία λίγη σάλτσα ντομάτας.
  7. Από πάνω προσθέστε λίγο τριμμένο χαλούμι και πάλι.
  8. Αν σας περισσέψει σάλτσα απλά ρίξτε τη γύρω από τις μελιτζάνες.
  9. Τοποθετήστε τις στο φούρνο και ψήστε μέχρι να λιώσει το χαλούμι και να πάρει ένα ωραίο χρυσό χρώμα.
