As we are entering the heart of fall and as schools have already started a month ago, so did colds and viruses. My son had two consecutive bad colds, the last of which left him with a bronchitis that has to be treated with antibiotics. Seems that the whole universe has conspired, so as for me not to be able to blog on a regular basis. Oh, whatever, who am I to go against it? I guess I should take things the way they come each day.

So, just to make my ill family-at least one member-happy, I made those drummettes which I found on a blog called Janet is Hungry. I have the recipe many years now and I always wanted to try them. The original one was named Turkish Chicken Thighs. I have no idea why she called them Turkish, maybe because they contain yogurt and mint. I thought to call them Mediterranean since all the ingredients used, can be found in any country around the eastern Mediterranean Sea and I used drummettes instead of thighs. The drummettes were super delicious and very juicy after staying in yogurt overnight. So, if you feel like trying them you won’t be disappointed.

Mediterranean Chicken Drummettes

Ingredients
10 skin on, bone-in chicken drummettes
2 tbsp lemon juice
1 cup low fat Greek yogurt
1 cup buttermilk
4 garlic cloves, minced
1 tbsp ground ginger
1 ½ tsp paprika
1 ½ tsp dried spearmint
1 tsp salt

Instructions

Mix everything in a bowl. Put the drummettes in the yogurt mixture, cover and refrigerate at least 5 hours.
I left them in the fridge for 24 hours.
Next day discard the marinade and place the drummettes on a rack.
Put it under the broiler at 225° C and broil until they are thoroughly done about 15 to 20 minutes.
You can bbq them, I believe it will be even better.
Serve them over pitas or rice or French fries.
Totally delicious and addictive!
