I was looking at my closet the other time and I have noticed that I had a jar of molasses almost intact. So, I started my search through the internet, so as to find a recipe that would help me consume most of it. And I found it. It comes from another blogger Culinary Chase and it was for molasses cookies. I made them and they were very easy and very delicious. Here is the recipe:

 

Molasses Cookies
Ingredients
3/4 cup white sugar
1 cup molassses
1/2 cup shortening (I used corn oil)
1 egg
1/4 cup cold water
1/4 cup vinegar (I used cider vinegar)
1 cup flour
3 tsp baking soda
1 tsp ginger
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp allspice
3 1/2 cups flour

 

Instructions
In a bowl, cream the shortening with sugar. Add molasses, egg, vinegar and water. Mix well. Add 1 cup of flour and mix until combined. Then throw the remaining flour with all the dry ingredients to the molasses mixture. Preheat oven at 175 C. Using a tablespoon drop onto a cookie sheet. Bake for 10 to 12 minutes.
