Three days without internet! Can you believe that? I couldn’t work on my blog, couldn’t visit my friend’s blogs and couldn’t send or receive e-mails. Now, if this had happened during the week, I would have no problem, since I have internet at my office, but during weekend, this sucks.
Anyway, internet was finally connected and I am back on the air again. I apologize to all my blog friends for not visiting, truly it was beyond my control, as Vicomte de Valmont or John Malkovitz used to say to Marquise de Merteuil or Glen Close, when he seduced and started a relationship with Madame de Tourvel or Michelle Pfeiffer in Dangerous Liaisons, one of the best movies I have ever seen.
Back in the 1995 when I was studying in the States, I became familiar with TGI Friday’s. They had couple of dishes that I liked very much and they were so much different than what I was used to.
When Friday’s opened their first brunch in Greece quite a few years ago, I started visiting it here in Athens too. From time to time, I and my husband go there and have lunch or dinner. Last time I went there-which I must say it is like 5 months ago-I ordered the Pasta Alfredo with Jack Daniels Chicken.
I loved every bit of it. I know it was loaded with fats and calories, but like every sinful thing in life it was so good.
So, from the moment I came back home, I decided to try and copy the recipe in a more healthy and homey version. I searched the internet and I found couple of recipes that, after a few alterations, helped me to make my own version of this dish, which I will show to you straight away!

Pasta Alfredo with Jack Daniels Chicken
For the Jack Daniels Chicken
700 gr. /25 oz chicken breasts cut in cubes
2 tbsp olive oil
1 cup pineapple juice
1 tbsp pineapple puree
2/3 cup water
¼ cup teriyaki sauce
1 tbsp soy sauce
1 cup brown sugar
3 tbsp lemon juice
1 tbsp Jack Daniels bourbon
1 tbsp onion powder
2 tsp garlic powder
For the Alfredo Sauce
200 gr. /4 oz. cream cheese
60 gr. /2 oz. butter
1/4 cup Parmesan cheese
1/4 cup milk
Garlic to taste
500 gr. /18 oz. any pasta you want. I used spaghetti
Assembly
150 gr. /5 oz. bacon cut in cubes
1 onion chopped
½ cup Marsala wine
8 cherry tomatoes cut in half
The Alfredo sauce
Salt and pepper to taste
Instructions
For the Jack Daniels Chicken
In a skillet pour the olive oil and sauté the chicken until it is almost done.
In the meantime, prepare the sauce by placing everything in a pot and bringing it to boil.
Let it cook in medium/low heat.
When the chicken is almost done, remove from skillet and place the pieces on the pot with the sauce.
Let it cook until it is completely done.
If the sauce is somewhat runny, thicken it with 1 tbsp. of corn flour dissolved in 1 tbsp of water.
Put it aside.
For the Alfredo Sauce
Soften cream cheese and butter.
Add the cheese, the milk and the garlic over low heat.
When the batter starts to boil, remove from heat.
Assembly
Boil pasta according to your liking.
Sauté the bacon bits and the onion in a sauté pan until bacon starts to loosen and the onion to become transparent.
Add the Marsala wine and let it boil until it will be reduced in half.
Add the Alfredo sauce.
Add the pasta and toss.
Stir in the cherry tomatoes and a dash cayenne pepper.
Serve the Alfredo Pasta and on top the Jack Daniels Chicken.

- 700 γρ. κοτόπουλο στήθος κομμένο σε κύβους
- 2 κ.σ. ελαιόλαδο
- 1 φλ. χυμό ανανά
- 1 κ.σ. πολτό ανανά
- ⅔ φλ. νερό
- ¼ φλ. σάλτσα teriyaki
- 1 κ.σ. σάλτσα σόγιας
- 1 φλ. καφέ ζάχαρη
- 3 κ.σ. χυμό λεμονιού
- 1 κ.σ. Jack Daniels μπέρμπον
- 1 κ.σ. κρεμμύδι σε σκόνη
- 2 κ.γ. σκόνη σκόρδου
- 200 γρ. τυρί κρέμα
- 60 γρ. Βούτυρο
- ¼ φλ. τυρί παρμεζάνα
- ¼ φλ. γάλα
- Σκόρδο όσο θέλετε
- 500 γρ. Ότι ζυμαρικό θέλετε. Εγώ χρησιμοποίησα μακαρόνια
- 150 γρ. μπέικον κομμένο σε κύβους
- 1 κρεμμύδι ψιλοκομμένο
- ½ φλ. κρασί Μαρσάλα
- 8 ντοματίνια κομμένα στη μέση
- Σάλτσα Αλφρέδο
- Αλάτι και πιπέρι
- Σε μια κατσαρόλα ρίχνουμε το ελαιόλαδο και σοτάρουμε το κοτόπουλο μέχρι να ροδίσει.
- Εν τω μεταξύ, ετοιμάστε τη σάλτσα τοποθετώντας όλα τα υλικά σε μια κατσαρόλα και βράζοντάς τα.
- Χαμηλώστε τη φωτιά και αφήστε να σιγοβράσει.
- Όταν έχει μισοψηθεί το κοτόπουλο, βγάλτε το από το τηγάνι και τοποθετήστε τα κομμάτια στην κατσαρόλα με τη σάλτσα.
- Αφήστε το να μαγειρευτεί μέχρι να ψηθεί εντελώς.
- Αν η σάλτσα είναι κάπως αραιή, δέστε τη με 1 κουταλιά κορν φλάουρ διαλυμένο σε 1 κουταλιά της σούπας νερό.
- Βάλτε το στην άκρη.
- Αφήστε να μαλακώσουν το τυρί κρέμα και το βούτυρο.
- Προσθέστε το τυρί, το γάλα και το σκόρδο σε μια κατσαρόλα σε χαμηλή φωτιά.
- Όταν αρχίσουν να βράζουν, αποσύρετε από τη φωτιά.
- Βράστε τα ζυμαρικά σύμφωνα με τα γούστα σας.
- Σοτάρετε τα κομμάτια του μπέϊκον και το κρεμμύδι σε ένα τηγάνι μέχρι το μπέικον να βγάλει το λίπος του και το κρεμμύδι να γίνει διαφανές.
- Σβήστε με το κρασί Marsala και αφήστε να βράσουν μέχρι αυτό θα μειωθεί στο μισό.
- Προσθέστε τη σάλτσα Αλφρέντο.
- Ρίξτε τα μακαρόνια και ανακατέψτε.
- Ρίχνετε μέσα τα ντοματίνια και λίγο πιπέρι.
- Σερβίρετε τα ζυμαρικά Alfredo και από πάνω το Jack Daniels κοτόπουλο.
