In Greek mythology, Eros was the god of love. According to myth, when Eros was striking someone with his arrows, he immediately fell in love. His power was invincible not only among humans but also among gods. According to orphic teachings Eros came from a cosmic egg that Night left in the bays of Erebus. That means that Eros was not actually born but came out of an egg.
He, once, was also a victim of his power. Once upon a time there was a beautiful girl called Psichí (soul in English). She was even more beautiful than the goddess of beauty Aphrodite. Because of that beauty, she was very famous and many men came to her home to admire her and flirt her. Aphrodite realized that men’s interest towards her face has lessened because of Psichí and she became angry and jealous. She then decided to take revenge and hence, asked Eros to poison all men, so no one would give a second look at Psichí. Eros in his attempt to satisfy Aphrodite’s wish, made a mistake and hit himself with his own arrow. He immediately fell in love with the beautiful girl.
As years were passing by, Psichí could not get married while all her sisters had already created families of their own. Her parents, desperate, went to Delphi oracle asking for answers. The oracle said that she was going to marry an immortal and thus had to get dressed as a bride and go to the tip of a mountain. Her parents although were very sad, followed exactly the oracle and took the girl up on the peak of the mountain. Zephyrus who was a wind god felt sorry for the poor girl and lifted her and took her to a green valley. When she landed there, she saw a huge, luxurious palace. Eros has created it for her to go and meet her. Every night Eros was visiting the girl but she was not able to see his face and didn’t know with whom she was making love.
Her sisters jealous of her lack and the luxurious life she was living, told her that the person sleeping with her was a dragon and persuaded her to kill it. She then took a knife and when Eros fell asleep Psichí took a candle and prepared to kill him. As she held the candle close to him she saw the face of Eros but at the same time the candle dripped and Eros woke up. He realized everything and flew away from her scared.
Psichí understood all the plotting of her sisters and regretted deeply. She immediately started looking for Eros but goddess Aphrodite had imprisoned him. Desperate as she was, went straight to Aphrodite and asked her to release him. Aphrodite said to her that to do that she would have to do three challenges. First to put in order an enormous quantity of legume. Second to bring to Aphrodite golden wool from wild sheep and third and most difficult, to go to the underworld and bring Persephone’s box with her beauty cream. Nature fell pity for the girl and helped her accomplish all three challenges but when Psichí opened the box she fell in deep sleep. Eros having watched his beloved one’s challenges escaped and went to Zeus to ask for his help. Zeus, listened carefully the young lover and he allowed them to get married making Psichí immortal first.
I love this story as it is not that well known as other love stories in Greek mythology. I also love eggs and I thought of making something a bit out of the ordinary. I tried to incorporate my favorite spanakopita stuffing with an omelet and made these delicious rolls. They are perfect as breakfast, brunch or light meal and they can be eaten at room temperature as well.
- 4 eggs
- 20 gr. / 1 heaping tbsp all-purpose flour
- 60 gr. / 2 oz. grated cheese (parmigiano Reggiano is fine but you can use any other salted cheese)
- 40 gr. / 1.5 oz. milk
- pepper
- 125 gr. / 4.5 oz. baby spinach
- 2 small onions, finely sliced
- 50 gr. / 1.7 oz. cream cheese
- 50 gr. / 1.7 oz. feta cheese, crumbled
- 50 gr. / 1.7 oz. white mushrooms, sliced
- 2 tbsp fresh dill, chopped
- Pepper
- Olive oil for sautéing
- ⅓ cup cheddar cheese, grated
- In a skillet pour couple of tbsp. of olive oil and sauté the onions and mushrooms in medium heat until they are soft.
- Add the spinach and dill and sauté for couple of minutes.
- Add the feta.
- Remove from fire and add the cream cheese and stir so everything is incorporated.
- Set aside.
- Preheat oven to 175° C / 375° F.
- Whisk the eggs and add the rest of the ingredients.
- Take a pan 21cm X 28cm / 8 in. X 11 in. and cover its bottom with parchment paper.
- Pour the omelet on it and bake for 15 minutes.
- Remove from the oven and let it cool for 5 minutes.
- Take the omelet with the parchment paper out of the pan and spread on top of it the stuffing.
- Carefully with the help of the parchment paper, roll it so as to create a log.
- Spread on top of it the cheddar cheese and place it under the broiler for 3 to 5 minutes.
- Be careful and pay attention to it so as not to get burnt.
- Remove, let it cool and with a sharp knife cut it in slices.
- Serve immediately.
- 4 αυγά
- 20 γρ. αλεύρι για όλες τις χρήσεις
- 60 γρ. τριμμένο τυρί (η παρμεζάνα είναι μια χαρά, αλλά μπορείτε να χρησιμοποιήσετε οποιοδήποτε άλλο αλμυρό τυρί)
- 40 γρ. γάλα
- Πιπέρι
- 125 γρ. Σπανάκι baby
- 2 μικρά ξερά κρεμμύδια, κομμένα σε μισές ροδέλες
- 50 γρ. τυρί κρέμα
- 50 γρ. φέτα, θρυμματισμένη
- 50 γρ. λευκά μανιτάρια, κομμένα σε φέτες
- 2 κ.σ. φρέσκο άνηθο, ψιλοκομμένο
- Πιπέρι
- Ελαιόλαδο για σοτάρισμα
- ⅓ φλ. τυρί cheddar, τριμμένο
- Σε ένα τηγάνι ρίχνουμε δυο κουταλιές ελαιόλαδο και σοτάρουμε τα κρεμμύδια και τα μανιτάρια σε μέτρια φωτιά μέχρι να μαλακώσουν.
- Προσθέτουμε το σπανάκι και τον άνηθο και σοτάρουμε για μερικά λεπτά.
- Προσθέτουμε την φέτα.
- Βγάζουμε από τη φωτιά και προσθέτουμε το τυρί κρέμα και ανακατεύουμε έτσι ώστε να ενσωματωθεί.
- Αφήνουμε στην άκρη.
- Προθερμαίνουμε το φούρνο στους 175° C.
- Χτυπάμε τα αυγά και προσθέτουμε τα υπόλοιπα υλικά.
- Παίρνουμε ένα ταψί 21 cm X 28 cm και καλύπτουμε το κάτω μέρος με λαδόκολα.
- Ρίχνουμε την ομελέτα πάνω και ψήνουμε για 15 λεπτά.
- Αφαιρούμε από το φούρνο και αφήνουμε να κρυώσει για 5 λεπτά.
- Βγάζουμε την ομελέτα με την λαδόκολλα έξω από το ταψί και απλώνουμε από πάνω τη γέμιση.
- Προσεκτικά με τη βοήθεια της λαδόκολας, την τυλίγουμε σε ρολό έτσι ώστε να γίνει ένας κορμός.
- Απλώνουμε από πάνω το τσένταρ και τοποθετούμε στο γκριλ για 3 έως 5 λεπτά.
- Να είστε προσεκτικοί να το βγάλετε εγκαίρως ώστε να μην αρπάξει.
- Αφήνουμε να κρυώσει και με ένα κοφτερό μαχαίρι το κόβουμε σε φέτες.
- Σερβίρετε αμέσως.
