Everyday my mother picks my son up from school, because I am at work. She takes him at her home which, coincidentally, is next to ours; she feeds him and put him to sleep for an hour. I come back at home at 5.00 p.m. and I take it from there. So, everyday as they return home from school, my son always wants to buy a sweet for dessert after lunch. My mother, who cannot really say no to him, buys him from the local bakery whatever he wants.
When he told me that, I thought that instead of buying something with ambiguous ingredients, it would be better, if I made something for him. I asked him what is his favorite dessert and he told me the chocolate pie. I searched my recipes and books and I decided to follow the recipe of Stelios Parliaros.
As I have mentioned before, he is a famous Greek pastry Chef and his recipes never fail me. As you know pastry art needs accuracy and is not as easy as cooking. If the ingredients are not correct, then you will end up with a failure dessert. That is the reason why, it is very important to follow recipes from Chefs you trust and you know that they are very accurate as to the ingredients they use and the times of baking. Stelios Parliaros is one of them. At this point I must apologize for the picture, this chocolate pie tastes better than it looks. It is easy, tasty and more importantly, it can be made with ingredients that anyone has in his closet.

Chocolate Pie

Ingredients
120 gr. semi-sweet chocolate
110 gr. butter
4 eggs
150 gr. granulated sugar
60 gr. all purpose flour
15 gr. cocoa
1 tbsp Cointreau

Instructions

Melt the chocolate and the butter in the microwave.
In your stand mixer add the eggs and sugar and whisk for one minute.
Incorporate the melted chocolate.
Add the flour and the cocoa shifted and the Cointreau.
Take a spring form 20 cm. or a pan with diameter 20 cm.
Butter it and flour it.
Pour the batter and bake in a preheated oven at 200° for 12 to 15 minutes depending how dense you want the cake in the center.
The less you bake it the more lava has inside it.
Take it out of the oven and let it stand until it becomes cold.
Unmold and serve.
You can serve it with vanilla ice cream or caramel syrup.

  • 120 γρ. Σοκολάτα κουβερτούρα
  • 110 γρ. βούτυρο
  • 4 αυγά
  • 150 γρ. ζάχαρη
  • 60 γρ. αλεύρι για όλες τις χρήσεις
  • 15 γρ. κακάο
  • 1 κ.σ. Cointreau
Instructions/ Εκτέλεση
  1. Λιώνουμε τη σοκολάτα και το βούτυρο στο φούρνο μικροκυμάτων.
  2. Στον κάδο του μίξερ προσθέτουμε τα αυγά και τη ζάχαρη και ανακατεύουμε για ένα λεπτό.
  3. Ενσωματώνουμε την λιωμένη σοκολάτα.
  4. Προσθέτουμε το αλεύρι και το κακάο αφού το έχουμε κοσκινήσει και το Cointreau.
  5. Παίρνουμε μία φόρμα κέικ με διάμετρο 20 cm. ή ένα απλό ταψάκι με διάμετρο 20 cm.
  6. Το βουτυρώνουμε και το αλευρώνουμε.
  7. Ρίχνουμε το μίγμα και ψήνουμε σε προθερμασμένο φούρνο στους 200° για 12 έως 15 λεπτά ανάλογα με το πόσο ρευστό θέλουμε το κέικ στο κέντρο.
  8. Αν το ψήσουμε 12 λεπτά θα είναι πιο ρευστό στο κέντρο.
  9. Στα 15 λεπτά είναι σταθερό.
  10. Το βγάζουμε από το φούρνο και το αφήνουμε το να σταθεί μέχρι να κρυώσει.
  11. Το βγάζουμε από το ταψί η τη φόρμα και σερβίρουμε.
  12. Μπορείτε να το σερβίρετε με παγωτό βανίλια ή σιρόπι καραμέλας.
