I don’t know what has happened and I lost all my pictures of the two things I cooked yesterday. The one was a cheesecake and the other was chicken thighs with teriyaki sauce. Thank god there is the internet and I took this picture from there. This picture is very close to the one I took and the cheesecake looked like the one above. The recipe comes from Stelios Parliaros a very famous Greek pastry chef and it was presented in a Saturday TV show Sweet Alchemies in which he makes sweets from Greece and all over the world. As always the recipe was very precise and did not fail me. It is a very easy and quick recipe and now that strawberries are in season, I found the opportunity to make this sweet. Now, regarding the chicken teriyaki, I will post the recipe either with no picture, or I will try and dig one from the internet again. Sorry about that.
Cheesecake with Strawberries
Ingredients
For the base
250 gr. digestives
125 gr. melted margarine
For the filling
600 gr. philadelphia cheese
60 gr. caster sugar
200 gr. heavy cream (35% fat)
For topping
Strawberry marmelade
Fresh strawberries
Instructions
For the base
Put the digestives to the blender and crumble them. Mix with the margarine. Take a 20 cm loose-bottomed tin and press the digestives-margarine mix with our fingers so as to form a thin layer. Bake in a preheated oven at 180 C for 10 to 12 minutes. Take it out and let it cool.
For the filling
We mix the heavy cream with the sugar to become chantilly and we add the cream cheese and fold gently. We spread the mixture above the digestives evenly and put in the fridge for an hour.
For the topping
We take the cheesecake out of the refridgerator and put the strawberry marmelade slightly calded on the microwave, so as to spread more easily. On top we decorate with fresh strawberries cut in half. We unmold carefully and serve.
