Today is Clean Monday for Orthodox Christians. This signals the beginning of a forty days’ Lent from now until Easter Saturday, which this year is on 11th of April. This particular Lent is a very strict one, having everyone who follows it to refrain from anything that comes from animals i.e. meat and its byproducts, but also fish is forbidden too. Only winkles, clams, shrimps and generally all seafood that has no blood and bones.

I don’t fast, but we keep the tradition on Clean Monday and all family fasts this particular day, eating exactly what religion dictates. Festive table consists of several dishes some of them listed below plus Lagana. Lagana is a bread that in the old days was made without a starter, exactly as the bread Jews ate before they left Egypt.  Nowadays, we all make it adding dry or fresh yeast that gives this flattened bread a nice smooth texture.

Every year I am experimenting with a recipe for a lagana having my family as Guinea pigs to try and tell me what they think. This year I have worked on a recipe for bread adding and subtracting elements until I made what I think a very good Lagana with a crispy crust and soft and chewy interior. The good thing about this bread is that it needs absolutely no kneading by hand, only in the stand mixer. Nevertheless, it requires an overnight rise in the refrigerator, but you can make several breads and keep this dough in the fridge for up to a week, taking out an amount enough to make one bread per day.

Clean Monday Lagana

Ingredients/ Συστατικά
  • 935 gr / 33 oz. all-purpose flour
  • 1 tbsp + 1 tsp salt
  • 2 tsp dry yeast
  • 1 ½ tsp sugar
  • 1 tsp anise (optional)
  • 50 gr. / 2 oz. tahini
  • 680 gr. / 24 oz. lukewarm water
  • Sesame for sprinkling
Instructions/ Εκτέλεση
  1. The Previous Day
  2. Mix all dry ingredients in a bowl.
  3. In the bowl of your mixer pour the water and the tahini.
  4. Mix with the hook until tahini is dissolved in the water.
  5. Throw the dry ingredients into the wet ones and mix for about three to four minutes.
  6. Take a glass bowl, oil it with olive oil and place the dough there.
  7. Let it rest at room temperature for two hours.
  8. After these two hours, put the bowl in the fridge covered with cling film overnight.
  9. Next day take an amount of about 400 gr. / 14.5 oz. from the dough.
  10. Let the rest of the dough in the fridge and work with the amount you extracted.
  11. Take a pan and put parchment paper on it.
  12. Work with dough, flatten it inside the pan and on the parchment paper just like in the pictures.
  13. This particular quantity makes a bread of 20cm X 25cm / 8 in. X 10 in.
  14. Let the bread stay at room temperature for 75 minutes.
  15. Preheat oven at 200° C / 400° F.
  16. With your fingertip make small scattered holes on the bread.
  17. Brush the top of the bread with warm water and sprinkle with sesame seeds.
  18. Put in the oven and bake for 20 minutes or until the bread has taken a nice golden color.
  19. Remove, let it stay on a rack to cool and serve.

  • 935 γρ. αλεύρι για όλες τις χρήσεις
  • 1 κ.σ. + 1 κ.γ. αλάτι
  • 2 κ.γ. ξηρή μαγιά
  • 1 ½ κ.γ. ζάχαρη
  • Προαιρετικά μπορείτε να προσθέσετε και γλυκάνισο περίπου 1 κ.γ.
  • 50 γρ. ταχίνι
  • 680 γρ. νερό χλιαρό
  • Σουσάμι για το πασπάλισμα
Instructions/ Εκτέλεση
  1. Την Προηγούμενη Ημέρα
  2. Ανακατέψτε όλα τα στεγνά συστατικά σε ένα μπολ.
  3. Στο μπολ του μίξερ σας ρίξτε το νερό και το ταχίνι.
  4. Ανακατέψτε με το γάντζο μέχρι το ταχίνι να διαλυθεί στο νερό.
  5. Ρίξτε τα στεγνά συστατικά στα υγρά και ανακατέψτε για περίπου τρία έως τέσσερα λεπτά.
  6. Πάρτε ένα γυάλινο μπολ, λαδώστε το με ελαιόλαδο και τοποθετήστε τη ζύμη εκεί.
  7. Αφήστε να ξεκουραστεί σε θερμοκρασία δωματίου για δύο ώρες.
  8. Μετά από αυτές τις δύο ώρες, βάλτε το μπολ στο ψυγείο καλύψτε το με μεμβράνη και αφήστε το όλη νύχτα.
  9. Την επόμενη ημέρα πάρτε περίπου 400 γρ. από τη ζύμη.
  10. Αφήστε την υπόλοιπη ζύμη στο ψυγείο και δουλέψτε με την ποσότητα που βγάλατε.
  11. Πάρτε ένα ταψί και στρώστε το με χαρτί ψησίματος.
  12. Δουλέψτε τη ζύμη, ισιώνοντάς τη πάνω στο χαρτί ψησίματος ακριβώς όπως στις φωτογραφίες.
  13. Η συγκεκριμένη ποσότητα κάνει ένα ψωμί 20 cm X 25 cm.
  14. Αφήστε το ψωμί σε θερμοκρασία δωματίου για 75 λεπτά.
  15. Προθερμάνετε το φούρνο στους 200° C.
  16. Με το δάχτυλό σας κάντε μικρές διάσπαρτες τρύπες στο ψωμί.
  17. Αλείψτε την κορυφή του ψωμιού με ζεστό νερό και πασπαλίστε με σουσάμι.
  18. Βάλτε στο φούρνο και ψήστε για 20 λεπτά ή μέχρι το ψωμί να πάρει ένα ωραίο χρυσό χρώμα.
  19. Βγάλτε από το φούρνο, βάλτε το σε μία σχάρα για να κρυώσει και σερβίρετε.
