Back in the old days, there were not all these choices people have today, when it came to desserts. There was no television and transportation was hard and quite expensive. Apart from that, refrigerator hadn’t been invented yet and it was hard for people to preserve anything especially in a place like Greece where temperatures during summer are totally inappropriate for that.

So, in order to have always something handy and available for treating, women here came up with the idea of spoon sweet. Spoon sweet is something between fruit preserves and compote. What they did and continue to do until today is, they take the fruits and boil them for hours with sugar to make the spoon sweet. Greece is blessed with a climate that fosters a tremendous variety of fruits especially during summer.

These were the treats people had for everyone who was visiting. They were serving it in a big tray decorated with a handmade runner, having on it a small plate with a couple of teaspoons of the sweet, with fresh water along site.

Making a spoon sweet is a delicate procedure and requires experience because you have to deal with a fruit that year by year has changes in its texture, size, amount of water that carries, sweetness etc. Everyone can make a spoon sweet, but how good this is, well that is to be judged.

Nowadays, with the invasion of other sweets and modern ways to preserve them such as refrigerator, spoon sweet has somehow been spurned. Only few housewives master this art and people tend to prefer more glamorous desserts. I have a friend who makes spoon sweets for living. She has a small lab/shop where she experiments with new recipes for this particular Greek dessert. I love her creations and every time I visit her I buy couple of vases.

I had in my fridge a few of her vases with couple of teaspoons in them and I was trying to find a way to use them in a creative way. So, I thought of these little cigars of phylo stuffed with spoon sweet and roasted almonds. You cannot believe how tasty they were. They look like baklavas, but in reality they have fruit preserves in them. If you cannot find spoon sweet where you live, you can substitute with preserves or jam. The result will be almost the same.

Ingredients/ Συστατικά
  • 500 gr. / 1 lb phylo
  • 120 / 4 oz. to 130 gr. / 4.5 oz. blanched almonds, roasted and chopped
  • Spoon sweet or jam or preserves. For quantity you should calculate 1 tsp per roll. I made 45 rolls so I used 45 tsp of spoon sweet. I believe a jar plus a few tsp from a second one will be fine.
  • 250 gr. / 9 oz. butter, melted
For the Syrup
  • 2 cups sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 4 cloves
  • 1 tbsp of lemon juice
  • Rind of one lemon
Instructions/ Εκτέλεση
  1. Take the phylo sheet and place the short site in front of you.
  2. Divide it in three equal parts and cut three strips with a pair of scissors.
  3. You can do it once for all phylo sheets since they are the one on top of the other, or you can do it separately for each sheet, but this is time consuming.
  4. Place the strips one on top of the other and cover them with a towel, so for the phylo to not get dry.
  5. Take one strip with the short site close to you.
  6. Brush with butter.
  7. Fold it in two.
  8. Butter again.
  9. Place in the center of the short site that is towards you a tsp of spoon sweet or preserves and a tsp of the chopped almonds.
  10. Roll it and seal its left and right sites.
  11. Place them in a buttered round pan with diameter about 28 cm / 11 in.
  12. Make sure that each time you remove one phylo sheet the rest remain covered with the towel. In this way they will not get dry.
  13. Preheat oven to 150°C / 300°F.
  14. When you finish the rolling, pour the remaining butter on top of the phylo rolls.
  15. Place the pan in the oven and bake for 1 ½ to 2 hours depending on the oven.
  16. My oven is somewhat strong, so it took me 1 ½ hours.
  17. After the first half hour, cover the pan with parchment paper so the rolls won’t get burnt.
  18. Half an hour before you take the cigars out of the oven prepare the syrup.
For the Syrup
  1. In a pot put all the ingredients and bring to boil.
  2. Boil for 5 to 6 minutes and remove from fire.
  3. Remove the cinnamon stick, the cloves and the lemon rind.
  4. Let it cool.
  5. When the phylo rolls are ready, take them out of the oven.
  6. Take a rack and put a pan underneath it.
  7. Place the rolls on the rack.
  8. With a ladle pour the syrup to each and every one of them.
  9. Whatever has fallen in the pan, use it once again to pour it over the phylo rolls.
  10. Let them cool and serve them.
  11. I would recommend eating them with a scoop of ice cream, vanilla would be perfect.

Ρολλάκια Φύλλου με Γλυκό Κουταλιού

  • 500 γρ. φύλλο Βυρητού
  • 120 έως 130 γρ αμύγδαλα καθαρισμένα, ψημένα και ψιλοκομμένα
  • Γλυκό του κουταλιού ή μαρμελάδα. Για ποσότητα πρέπει να υπολογίζετε 1 κουταλάκι του γλυκού ανά ρολλάκι. Έκανα 45 ρολλά έτσι χρησιμοποίησα 45 κουταλάκια γλυκού. Πιστεύω ότι ένα βάζο συν μερικά κουταλάκια του γλυκού από το δεύτερο θα είναι μια χαρά.
  • 250 γρ. βούτυρο, λιωμένο
Για το Σιρόπι
  • 2 φλ. ζάχαρη
  • 1 φλ. νερό
  • 2 ξυλάκια κανέλας
  • 4 γαρύφαλα
  • 1 κ.σ. χυμό λεμονιού
  • Φλούδα ενός λεμονιού
Instructions/ Εκτέλεση
  1. Πάρτε το φύλλο και τοποθετήστε τη στενή πλευρά του μπροστά σας.
  2. Χωρίστε το σε τρία ίσα μέρη και κόψτε τρεις λωρίδες με το ψαλίδι.
  3. Μπορείτε να το κάνετε μία φορά για όλα τα φύλλα δεδομένου ότι είναι το ένα πάνω στο άλλο, ή μπορείτε να το κάνετε χωριστά για κάθε φύλλο, αλλά αυτό είναι χρονοβόρο.
  4. Τοποθετήστε τις λωρίδες τη μία πάνω στην άλλη και σκεπάστε τις με μια πετσέτα, έτσι ώστε να μην ξεραθεί το φύλλο.
  5. Πάρτε μια λωρίδα και τοποθετήστε τη στενή πλευρά της μπροστά σας.
  6. Αλείψτε με βούτυρο.
  7. Διπλώστε τη στα δύο.
  8. Βουτυρώστε και πάλι.
  9. Τοποθετήστε στο κέντρο που είναι προς το μέρος σας ένα κουταλάκι του γλυκού του κουταλιού και ένα κουταλάκι του γλυκού ψιλοκομμένα αμύγδαλα.
  10. Ρολλάρετε και σφραγίστε εκατέρωθεν.
  11. Τοποθετήστε τα σε ένα βουτυρωμένο στρογγυλό ταψί με διάμετρο περίπου 28 cm.
  12. Σιγουρευτείτε ότι κάθε φορά που αφαιρείτε ένα φύλλο, τα υπόλοιπα παραμένουν καλυμμένα με την πετσέτα. Με αυτόν τον τρόπο δεν ξεραίνονται.
  13. Προθερμαίνετε το φούρνο στους 150° C.
  14. Όταν τελειώσετε, ρίξτε το υπόλοιπο βούτυρο πάνω από τα ρολλάκια.
  15. Τοποθετήστε το ταψί στο φούρνο και ψήστε για 1 ½ με 2 ώρες ανάλογα με το φούρνο.
  16. Ο φούρνος μου είναι κάπως δυνατός, οπότε μου πήρε 1 ½ ώρα.
  17. Μετά την πρώτη μισή ώρα, καλύψτε το ταψί με χαρτί ψησίματος, για να μην καούν τα ρολλάκια.
  18. Μισή ώρα πριν βγάλετε τα ρολλάκια από το φούρνο, ετοιμάστε το σιρόπι.
Για το Σιρόπι
  1. Σε μια κατσαρόλα βάλτε όλα τα υλικά και βράστε.
  2. Βράστε για 5 έως 6 λεπτά και αφαιρέστε από τη φωτιά.
  3. Αφαιρέστε την κανέλα, τα γαρίφαλα και τη φλούδα λεμονιού.
  4. Αφήστε το να κρυώσει.
  5. Όταν τα ρολλάκια είναι έτοιμα, βγάλτε τα από το φούρνο.
  6. Πάρτε μία σχάρα και τοποθετήστε ένα ταψί κάτω από αυτή.
  7. Τοποθετήστε τα ρολλάκια στη σχάρα.
  8. Με μια κουτάλα ρίξτε το σιρόπι από πάνω.
  9. Ό, τι έχει πέσει στο ταψί, το χρησιμοποιήτε ξανά ρίχνοντάς το πάνω από τα ρολλάκια.
  10. Αφήστε να κρυώσουν και σερβίρετε.
