During this past year my husband and I are in a control weight program. That means that we are following a certain diet that helps us maintain our weight stable. As the years pass by, I feel more and more the need to keep my weight steady. I never had a problem eating as much as I liked and keep fit. But after the 40’s, I find it hard to keep eating at the same rhythms and quantities as before.
My husband, on the other hand, was always on a diet as he gains weight even by breathing. It is so unfair! Anyway, we both try to consume food in small quantities and avoid sweets as much as humanly possible; this doesn’t work at all, but anyway.
Every day, before he leaves for work, he drinks a glass of milk and eats one cookie which is, in his case, a moustokoúlouro. Moustokoúloura are traditional Greek cookies made either from grape must or from grape molasses. Up until now, I was buying them from the local bakery store, but during the weekend, I saw this recipe by Stelios Parliaros on a magazine and I thought I should start making them at home, instead of buying them. Nothing is better than homemade and I am sure you all agree on that.
So, here we are with a recipe for moustokoúloura. They are not overly sweet, so they are also perfect for someone who’s on a diet! If you can find grape molasses where you live, do give them a try. They have a very unique taste and they are ideal to accompany your coffee or tea. I made a couple of changes in the original recipe. One was that I increased the amount of sugar and the other was that I divided the dough in two. In the first batch I added raisins and the second one I left it as it was and made funny figures for my son and his friends!
Moustokoúloura
Ingredients
200 gr. / 7 oz. olive oil
120 gr. / 4 oz. grape molasses
180 gr. / 6.5 oz. water
100 gr. / 3.5 oz. fresh full fat milk
250 gr. / 9 oz. sugar (the original recipe called for 200 gr., but what the heck let’s make it a bit sweet here)
50 gr. / 2 oz. cognac
1 tsp baking powder
1 tsp ground cinnamon
¼ tsp ground cloves
½ tsp ammonia in powder
¼ tsp baking soda
900 gr to 1 kilo / 32 oz. to 2 lb. all-purpose flour
A handful of raisins
Instructions
Preheat oven to 175° C/ 345° F.
In the mixer’s bowl throw the olive oil, the grape molasses, the water, the milk, the sugar and the cognac.
Mix slightly.
In another small bowl mix the baking powder, the ammonia, the cinnamon, the ground cloves and the soda.
Throw them into the olive oil batter and mix to incorporate.
Throw the flour to the batter as well, slowly, slowly until a kind of stiff dough is formulated around the paddle.
I divided the dough to two equal balls.
I made plain cookies with the first ball.
In the second ball I added the raisins and made moustokoúloura with raisins.
We take couple of pans and cover them with parchment paper.
Take a piece of dough equal to a big walnut and make cookies according to your liking.
Be careful not to make them too thick because they rise due to baking powder and the soda.
Place them on the pans and bake in batches for 15 to 18 minutes.
Do not over bake them because they will become hard.

- 200 γρ. ελαιόλαδο
- 120 γρ. πετιμέζι
- 180 γρ. νερό
- 100 γρ. φρέσκο γάλα πλήρες
- 250 γρ. ζάχαρη (η αρχική συνταγή έλεγε 200 γρ.)
- 50 γρ. κονιάκ
- 1 κ.γ. μπέικιν πάουντερ
- 1 κ.γ. κανέλα
- ¼ κ.γ. τριμμένο γαρύφαλλο
- ½ κ.γ. αμμωνία
- ¼ κ.γ. μαγειρική σόδα
- 900 γρ. με 1 κιλό αλεύρι για όλες τις χρήσεις
- Μια χούφτα σταφίδες
- Προθερμαίνετε το φούρνο στους 175 ° C.
- Στο μπολ του μίξερ, ρίξτε το ελαιόλαδο, το πετιμέζι, το νερό, το γάλα, τη ζάχαρη και το κονιάκ.
- Ανακατέψτε ελαφρώς.
- Σε ένα μικρό μπολ ανακατέψτε την αμμωνία το μπέικιν πάουντερ, την κανέλα, τα γαρύφαλλα και τη σόδα.
- Ρίξτε τα στο ελαιόλαδο και ενσωματώστε τα.
- Ρίξτε το αλεύρι σιγά-σιγά, μέχρι μια ζύμη να σχηματιστεί γύρω από το φτερό του μίξερ.
- Εγώ χώρισα τη ζύμη σε δύο ίσες μπάλες.
- Έκανα απλά μπισκότα με την πρώτη μπάλα.
- Στη δεύτερη μπάλα πρόσθεσα τις σταφίδες και έκανα μουστοκούλουρα με σταφίδες.
- Πάρτε 2-3 ταψιά και σκεπάστε τα με λαδόκολλα.
- Πάρτε ένα κομμάτι της ζύμης ίσο με ένα μεγάλο καρύδι και πλάστε το, σύμφωνα με τις προτιμήσεις σας.
- Προσέξτε να μην γίνουν πολύ χοντρά γιατί φουσκώνουν λόγω μπέικιν πάουντερ σόδας.
- Τοποθετήστε τα στα ταψιά και ψήστε σε παρτίδες για 15 έως 18 λεπτά.
- Προσοχή μην τα παραψήσετε διότι θα γίνουν σκληρά.
