Zucchini Baskets with Ground Beef

Zucchini, like all squash, has its ancestry in the Americas. However, the varieties of green, cylindrical squash harvested immature and typically called “zucchini” were developed in northern Italy, long after the introduction of cucurbits from the Americas. It appears that this occurred in the second half of the 19th century, though the first description of the variety under the name zucchini occurs in a work published in Milan in 1901.

Zucca is the Italian word for pumpkin/squash and zucchino/zucchina (zucca + ina = little) are diminutive forms, becoming zucchini/zucchine in the plural.

Zucchini is used in Italy, Australia, Canada, Germany, Sweden and the United States. The first records of zucchini in the United States date to the early 1920s. It was almost certainly taken to America by Italian immigrants and probably was first cultivated in the United States in California. A 1928 report on vegetables grown in New York State treats ‘Zucchini’ as one among 60 cultivated varieties of C. pepo.

Although nowadays we can find zucchinis throughout the year, I prefer to buy them when they are in season. I think during summer, they are at their best and the taste is without doubt, superior than that of other seasons. The last few years a new variety came to complement the zucchini family, that of the rounded ones. I think they are perfect for filling them and I always find new ingredients to fill them with.

This time I decided to make a nice ground beef filling with lot of cheese and herbs and spices. Very easy to make, they can be made in advance and pop them in the oven at the last minute until the cheese melts. They were totally delicious, and my husband took couple of them that were left, next day at work. He said that they were equally delicious even then.

Zucchini Baskets Filled with Melty Ground Beef

  • 6 rounded zucchinis
For the Ground Beef
  • 500 gr. / 1 lb ground beef
  • 350 gr. / 10 oz. finely chopped tomatoes (I used canned)
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1 red bell pepper, sliced
  • 30 gr./1 oz. dried mushrooms soaked in hot water and drained
  • 3 tbsp olive oil
  • salt and pepper
  • 6 basil leaves, chopped
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp ground nutmeg
  • 1 tbsp sugar
  • 1 cup shredded melting cheese such as cheddar or gouda or edam plus 1 more cup for topping
Instructions/ Εκτέλεση
For the Ground Beef
  1. In a skillet put the 3 tbsp of olive oil in medium/high heat and sauté the onion for couple of minutes.
  2. Add the garlic and sauté until fragrant.
  3. Throw the pepper and mushrooms and continue to sauté until they start to soften.
  4. Stir in the ground beef and sauté for 3 minutes.
  5. Next add the chopped tomatoes, salt, pepper, basil leaves, ground nutmeg, dried herbs and sugar.
  6. Lower heat to low and simmer for 40 minutes.
  7. Sprinkle the one cup cheese and stir to incorporate.
  8. Set aside.
For the Zucchini
  1. Cut the zucchinis in half.
  2. Cut their stems on both sides and with a spoon empty their flesh leaving half inch from the skin.
  3. Place them clean part downwards to a steamer and steam for about 12 minutes.
  4. Remove from steamer and put them immediately in very icy water to stop them from continuing to boil.
  5. Preheat oven to 175°C / 350°F.
  6. Fill them with the ground beef and sprinkle cheese on top of them.
  7. Bake until the cheese is completely melted and has taken a nice golden color.

Καλαθάκια Κολοκυθιού με Κιμά και Λιωμένο Τυρί

  • Για τον Κιμά
  • 500 γρ. μοσχαρίσιο κιμά
  • 350 γρ. ψιλοκομμένες ντομάτες ή κονκασέ
  • 1 κρεμμύδι, ψιλοκομμένο
  • 1 σκελίδα σκόρδο, λιωμένη
  • 1 κόκκινη πιπεριά σε φέτες
  • 30 γρ. Αποξηραμένα μανιτάρια, τα οποία τα έχετε μουλιάσει σε ζεστό νερό και στραγγίσει
  • 3 κ.σ. ελαιόλαδο
  • αλάτι και πιπέρι
  • 6 φύλλα βασιλικού, ψιλοκομμένα
  • ½ κ.γ. ρίγανη
  • ½ κ.γ. ξερό βασιλικό
  • ½ κ.γ. ξερό θυμάρι
  • ½ κ.γ. τριμμένο μοσχοκάρυδο
  • 1 κ.σ. ζάχαρη
  • 1 φλ. τριμμένο τυρί όπως γραβιέρα, κασέρι συν 1 ακόμη φλ. για από πάνω
Instructions/ Εκτέλεση
  1. Για τον Κιμά
  2. Σε ένα τηγάνι βάζουμε τις 3 κουταλιές της σούπας ελαιόλαδο σε μέτρια/υψηλή θερμοκρασία και σοτάρουμε το κρεμμύδι για μερικά λεπτά.
  3. Προσθέτουμε το σκόρδο και σοτάρουμε μέχρι να μυρίσει.
  4. Ρίχνουμε την πιεπεριά και τα μανιτάρια και σοτάρουμε μέχρι να μαλακώσουν.
  5. Ρίχνουμε τον κιμά και σοτάρουμε για 3 λεπτά.
  6. Στη συνέχεια προσθέτουμε τις ψιλοκομμένες ντομάτες, αλάτι, πιπέρι, τα φύλλα βασιλικού, το μοσχοκάρυδο, τη ρίγανη, τον ξερό βασιλικό, το ξερό θυμάρι και τη ζάχαρη.
  7. Χαμηλώνουμε τη φωτιά και σιγοβράζουμε για 40 λεπτά.
  8. Πασπαλίζουμε το ένα φλιτζάνι τυρί και ανακατεύουμε για να ενσωματωθεί.
  9. Το βάζουμε στην άκρη να κρυώσει.
  10. Για τα Κολοκυθάκια
  11. Κόψτε τα κολοκυθάκια στη μέση.
  12. Κόψτε τους μίσχους και στις δύο πλευρές και με ένα κουτάλι αδειάστε τη σάρκα τους αφήνοντας γύρω γύρω περίπου 1 πόντο.
  13. Τοποθετήστε τα στον ατμομάγειρα για περίπου 12 λεπτά.
  14. Βγάλτε τα από τον ατμομάγειρα βάλτε τα αμέσως σε πολύ παγωμένο νερό για να τα εμποδίσουμε να συνεχίσουν να βράζουν.
  15. Προθερμάνετε το φούρνο στους 175°C.
  16. Γέμιστε τα με τον κιμά και πασπαλίστε με τυρί από πάνω.
  17. Ψήστε μέχρι το τυρί να λιώσει εντελώς και να πάρει ένα ωραίο χρυσό χρώμα.
