German Chocolate Cake
Ingredients
1/2 cup boiled water
125 gr. / 2.5 oz. chocolate at least 60% cocoa
2 cups sugar
1 cup margarine
4 large eggs
1 tsp vanilla extract
2 1/2 cups self – rising flour
1 tsp soda or 2 tsp baking powder
1/4 tsp salt
1 cup milk
Instructions
Preheat oven to 175° C / 345° F.
Butter and flour either one big spring form or two smaller ones.
What I usually do is divide the batter into one medium spring form and another bread form.
Melt chocolate with the hot water.
Whisk until fully dissolved.
Divide the egg yolks from the whites.
In the mixer mix the sugar with the margarine until it becomes pale and fluffy.
Add the egg yolks.
Put the mixer to slow and throw the chocolate and the vanilla extract.
Add alternately the flour-soda or baking powder- salt mixture and the milk.
In another bowl whisk the whites to become meringue.
Add the meringue to the batter and mix gently with a spatula.
Throw the mixture to the pan or pans and bake for 40 to 45 minutes depending on the oven and the size of the pans.
Start checking them after 30 minutes by inserting a knife. If it comes out clean then they are done.

- 125 γρ. σοκολάτα τουλάχιστον με 60% κακάο
- 2 φλ. ζάχαρη
- 1 φλ. μαργαρίνη
- 4 μεγάλα αυγά
- 1 κ.γ. εκχύλισμα βανίλιας
- 2½ φλ. αλεύρι που φουσκώνει μόνο του
- 1 κ.γ. σόδα ή 2 κουταλάκια μπέικιν πάουντερ γι’αυτούς που δεν τους αρέσει η επίγευση που αφήνει η σόδα
- ¼ κ.γ. αλάτι
- 1 φλ. γάλα
- Προθερμένετε το φούρνο στους 175° C.
- Βουτυρώνετε και αλευρώνετε μία μεγάλη φόρμα ή δύο μικρότερες.
- Αυτό που κάνω συνήθως είναι να το βάλω σε μία μέτρια φόρμα και μία μικρότερη
- Λιώνετε τη σοκολάτα με το ζεστό νερό.
- Ανακατεύετε μέχρι να διαλυθεί τελείως η σοκολάτα.
- Χωρίστε τους κρόκους από τα ασπράδια.
- Στο μίξερ ανακατέψτε τη ζάχαρη με τη μαργαρίνη, μέχρι να γίνει ένα μίγμα αφράτο.
- Προσθέστε τους κρόκους των αυγών.
- Βάλτε το μίξερ να επιβραδύνει και ρίξτε τη σοκολάτα και το εκχύλισμα βανίλιας.
- Προσθέστε εναλλάξ το μίγμα από αλεύρι-σόδα ή μπέικιν- αλάτι με το γάλα.
- Σε ένα άλλο μπολ χτυπήστε τα ασπράδια να γίνουν μαρέγκα.
- Ρίξτε τη μαρέγκα στο μίγμα και ανακατέψτε απαλά με μια σπάτουλα.
- Ρίξτε το μίγμα στις φόρμες και ψήστε για 40-45 λεπτά ανάλογα με το φούρνο και το μέγεθος των ταψιών.
- Αρχίστε μετά από 30 λεπτά να το δοκιμάζετε αν έγινε βυθίζοντας ένα μαχαίρι.
- Αν αυτό βγει καθαρό είναι έτοιμα.
